hey sorry if it sounded curt! I just wanted you to eat something more nutritious :-( it's just that sometimes when I see recipes like that I remember the old days when I would gulp down bread and jam for dinner cause it was lonely to cook just for me.

I have ended 2007 in a very bad way... or I thought at the time. I lost my job, ended a 6 yr relationship and got to know that my ex ( the one of 6 yrs) was cheating on me.

2008 so far so good... I made a lot of new friends, had fun while single for a while and met the most understanding and amazing guy in my life... anyways, you heard of him already, he was a CS member!

Although I thought that 2008 was going to be a bitter year for me, in these couple of months I must say that I was happy... very happy indeed. I am trying to make up for the lost time with my family... for the times that I have given my family the side to be with my ex. I am spending a lot of my free time with my niece & nephew and am giving more time to friends, who has been my pillars through the time when I was down. They deserve to be given a god medal for the times that they have listened to me... like you all here!

now... right now... I would make sure that my partner works less so we spend more time together! Heìs such an amazing guy and he deserves some rest, so I would make sure he takes a couple of days off every week so we can spend some time together... only a couple of days cause he is so hard working that he would not be able to stay at home for longer.

again when I mention him I would love to thank CS for make it possible to meet this guy and all of you here in the forums cause you all were there for me when I needed advice to choose between him and someone else. With your help I made the best decision in my life.

never tried it with turkey... but you gave me an idea... will try it with chicken as I have some left overs almost every time we eat chicken at home.

Hi Rusty, I don't have much advice to give you unfortunately but I will pray for you and wish all goes well and that you will soon come to a decision that will be beneficial to you. Unfortunately, that is how it is still is in Malta, where parents control their kids even when they are soon pensioners themselves.. please do not take offence here, but I am trying to explain to all those who are not soooo common with the maltese attitude!

People like you have to stand on your feet and do not let anyone rule your life. Move on, and if your parents cannot cope without you, then there is always a care home possibility for them. Let them know how you feel and do not carry all this burden on your shoulders!

possibly you have'nt found any other easy so called "recipe" ?? uh oh!

Zucchini -Egg Tortilla


A mixture of beaten eggs with cooked zucchini is scrambled, spooned atop tortillas and topped with cheese. It's then baked to crisp the tortilla.

Ingredients:
2 large zucchini
6 eggs
1 cup cheese (feta, cheddar, edam)
1 Tbsp olive oil
4 tortillas
Salt and pepper, to taste


Directions:
Dice zucchini (with skin on) and saute in olive oil until tender and just starting to brown. Beat eggs; stir in zucchini, salt and pepper. Scramble the eggs in a skillet. Spoon mixture on top of tortillas on a cookie sheet, and then top with cheese. Bake about 15 minutes at 350 degrees until shell is a bit crisp.

the above serves 4, so if you are cooking just for you... you just have to lessen the amounts. I suggest you try it... its one of my favourites!
