The weather should be still great at that time of year as Sorrento is very south, flights take approx. 2.5 hrs from the UK and fly into Naples (NAP). Pompeii, Herculaneum and Vesuvius can be reached easily within half an hour by train. The Island of Capri is accessible via ferry/hydrofoil at between 20-40 mins.
