I have 13 tattoos and a few are very large I am planning on a back piece of angel wings-do men find large tattoo intimidating or is it more of a fact that I am 6'2"?

You shouldn't worry about those men who find your tattoes intimidating...they're idiots! A tattoo is a great way of self-expression.Most tattoed person are extremely honest in my experience!

but with some fancy letters...or maybe a little dragon on my back,...in full color

I want to get a back piece, upper back, between shoulder blades.
This is a fierce ambition of mine, although I'm totally broke.
I want to get an Oscar Wilde quote.

But I don't want just a text piece, I was wondering what kind of image I could get to go along with it?
Or should I just have really ornamental, striking border around the text?

The other cautions I have are (1) tattoos are a way to contract Hepatitis or HIV so be careful, (2) if you have to do it in a place that you will be able to cover for work or anything social that is important, (3) tattoos are sometimes addictive -- be careful you don't go overboard.
