~~Tortilla Soup~~

1 stick butter
1/2 cup unbleached flour
1 red onion
2 cups diced tomatoes
3-4 cloves garlic, minced
2 cups prepared beans (pinto or black)
1 cup of red chili sauce (can sub chili powder)
1 cup of green chili sauce (can sub chopped green chili)
(chili amounts can be changed to add more or less heat)
1/2 gallon of vegetable stock (you can also use chicken stock)
2 cups corn
2 tablespoons lime juice
2 tablespoons chopped cilantro (optional)
Aged Jack cheese
chopped chicken (optional)

Make a roux with the butter and flour. Saute the onion, tomatos, and garlic in the roux. Add beans and chili sauces. Add the stock and bring to a simmering boil. Add remaining ingredients.
Serve with fried corn chips and cheese.
Sometimes I'll put a dollop of sour cream on top
You can also squeeze some lime juice on the chips.

Enjoythumbs up thumbs up
