Crema de Mango

5 ripe mangoes
3 tablespoons fresh squeezed lime juice
1 1/ cups heavy creme, whipped
1 cup diced pecans
2 large oranges, peeled, seeded, diced & drained
4 or more tablespoons sugar or Splenda

Peel, seed & pur'ee mangoes with lime juice in a food processor or blender. Transfer mango to a large bowl, fold in whipped creme, pecans, and draines orange pieces. Sweeeten to taste. Spoon into dessert bowls or glasses. Chill throughly. Serve decorated with a maraschino cherry & sprig of fresh mint.

About 12 servings..

Well, I'm pretty good in the kitchen but find it really hard to cook for just one!
I live above a coffee shop and have a restrurant on either side of me.
So, tonight it's eggplant parm with chicken... dancing banana

Rice Salad

2 cups cold cooked rice
1 tart green apple jullined
1/2 avacado peeled & sliced
1 cup canned peas, drained
1 tablespoon vinegar
2 tablespoons olive iol
1 teaspoon prepared mustard
salt & pepper to taste
heart of lettuce

Garnish: cooked beets, shrimp & hard boiled eggs, sliced

Mix rice with the fruits and veggies. MAke a dressing of lemon juice, vinegar, oil & mustard, add it to rice mixture. Season to taste, chill at least 30 m9nutes.

Arrainge rice in a pyramid on a bed of shredded lettuce hearts, or press into a mold & then unmold. Garnish, serve with favorite salad dresing..
