Looking for a good Meatloaf recipe please

Posted: May 13, 2008, 5:57 PM CST
I have tried so many recipes, mixed with pork or carrots, ketchup, celery, etc. Even Martha Stewart's recipe did not impress me. I loved this one that a Greek family cooked but they would not share the recipe. Any body think they have the kick butt recipe I am looking for? Thank you in advance.handshake group hug

Buy a box of Lipton onion soup mix.
combine 2lbs ground beef
3/4 cup bread crumbs or 5 cubed slices of bread
2 eggs
3/4 cup water
1/3 cup ketchup
1 env lipton onion soup mix

Form it into a loaf, plop it into a large bread pan, pour some ketchup or BBQ sauce on top
bake at 350 for an hour uncovered
let stand 10 minutes before serving

Don't overcook it or it will be dry.

1lb ground something
I small to med chopped onion
1/2 chopped green pepper
couple of cloves of garlic, chopped to tiny pieces, otherwise, garlic powder, sprinkled 'til you see it.
2-3 squirts of ketchup
half a dozen shakes of worchestershire sauce
a good sprinkle of oregano (1 tbl)
6 grinds of fresh pepper
about 1/2 cup of oats
1 egg

mash it all up, put in loaf pan and cook at 375 degrees. Pour off fat, if any, for gravy. Cooks about 45 minutes, brown on top, pulls away from pan.

(my cooking is always an estimate. Sorry)

Mine is a guestimate too. Thank you, ground chuck too fatty, or not.

I like mashed potatoes and make gravy with the fat. Ground chuck doesn't give enough fat to really make gravy. I like the cheap stuff for meatloaf. The hamburger-in-a-roll makes the best. Like I said, I pour off the fat and use it for gravy. My gravy is red, takes tomato paste, salt, pepper, worchestershire, or teriaki, and a flour/water shaken mixture.

One pound feeds four with leftovers. I rarely made it and my ex and kid were slim.

I don't know what they eat, but my ex is HUGE! He's gained 80-100 pounds, or more, after our divorce.

I made meatloaf every couple of months. Otherwise, I cooked pretty healthy.

I just started making meat loaf for dinner recently. My kids not only eat it for dinner, but sometimes my son will eat it for lunch when they get home from school the next day.

throw a piece of bread in a medium bowl.
Pour a little milk on it just to get it wet.
Crack an egg on top of the milky bread.
throw in some minced onion, garlic, ketchup, worchestershire,
tobasco, bbq sauce, aged cheese (asagio, parm, gouda.)
add a pound of ground beef, lamb, pork or a combination of these.

Squish it all together and pat it into a pan, bake for 30 min or so until firm, you don't want to overbake it.

I use the leanest ground meat i can find.

i have to take exception with the idea that there are no good meatloaf recipies. A good cook can make anything taste wonderful. And at the end of the evening, you find yourself saying, "that was really good."

Now if you just hate meatloaf, that i understand. Everyone has a few foods that just don't look or taste good. but being a cook/baker for, i don't know twenty years? i guess, there are always good recipes.

I don't know how many times i've had an owner or manager tell me to make something good looking and tasty out of some half-dead vegatable/animal matter from the walk-in.

admittedly, there have been a few times, that i just laughed.
But usually i try, really hard..... not to.
