My meatloaf recipe is pretty much like ooby's, only I use beefy onion or onion mushroom soup mix, and soak the bread in milk like lorax.

1 1/2-2# ground beef
4-5 slices of bread
milk, enough to soak the bread
2 eggs
soup mix
garlic
add extra chopped onion if you want

Squish it up real good with your hands, make into a loaf, bake at 325-350. Pour the grease off as it's cooking. I put the ketchup on top about 10-15 min before it's done.

Haven't made this in a while, too much for one person. It's good cold for sandwiches if you pour the grease off real good. A couple of thin slices, mayo on one side and ketchup on the other, yum. I may just have to make me one.

Yes, I use the beefy onion soup mix also, I didn't know there was any other kind.

laugh I agree ooby, and why the heck would you need olive oil in meat loaf! Meat loaf is about the only thing that I don't like Italian type spices in, it's just not good in that, don't know why, I like it in everything else. And peppers in meat loaf like a lot of people use, yuck, instant indigestion!

The regular onion soup mix is the stuff people started making dip out of 20-something years ago, I think it's nasty. Try the onion-mushroom, it's good too. thumbs up

Here you go, try this one!!! I even included instructions!!!

2 pound(s) GROUND BEEF; Lean.
1 clove(s) GARLIC; Minced.
1 package(s) (6 ounce) STUFFING MIX; Any Flavor.
1 envelope(s) BEEFY ONION SOUP MIX
2 EGGS
2 cup(s) CHEDDAR CHEESE; Grated.
1 3/4 cup(s) WATER

In a large bowl, combine ground beef, garlic, stuffing mix, beefy onion soup mix, eggs, cheese and water.
Mix well.
Press meat mixture into a large loaf pan; I used a 9 5/8 x 5 1/2 x 2 3/4 loaf pan with a jelly roll pan under it to catch any spill over (which did not happen).
Bake at 350 degrees covered for 1 hour.
Remove cover and continue to bake for 30 more minutes or until meat loaf is done.
Cooking time may vary depending on the size of baking dish being used.

FAMILY MEATLOAF

2 lbs ground round
1 cup bread crumbs or crushed saltine crackers
2 eggs
1 cup Parmesan cheese
1 small onion diced
1 clove garlic crushed
1 pkg meatloaf seasoning mix
1/4 tsp ground black pepper
1 small can tomato sauce

Mix ground beef, bread crumbs, eggs, 1/2 cup cheese, onion, garlic, seasoning packet, and black pepper. Pour tomato sauce over the top and sprinkle with remaining 1/2 cup Parmesan cheese. Place in a loaf pan and bake at 350°F for 1 1/2 hours on bottom rack of oven.
Final internal temperature should be 170°F for ground beef. Ovens vary, so check meatloaf after 1 hour.

Grandma's Country Meatloaf

2 lbs Lean ground beef
1 pkg of Pictsweet seasoning blend
1 cup of minute rice uncooked
1 pkg of Lipton's beefy onion soup mix
2 eggs
15 oz can of tomato sauce

Mix ground beef, uncooked minute rice, Lipton's beefy onion soup mix, eggs, tomato sauce in large bowl. Saute seasoning blend in 1 tbs of butter until tender and add to beef mixture. Place in loaf pan and cook for about 1 1/2 hours on 350°F.

If desired you can also add about a 1/2 cup ketchup on top of the meafloaf before cooking.

***NOTE***

This is also a good recipe for stuffed bell peppers.

Thanks for shareing your projectile meatloaf with us, although I have to say there is a good meatloaf out there and with Bulls-Eye BBQ saurce ofn it ya got em lineing up....
