Hmmm well, I'm Italian and most of the time I can estimate the amount per the palm of my hand and then will add any additional based on taste preference. So in a sense I do measure but its pased on the palm of my hand.

whem making gravy (sauce) I do the samr thing. But when trying something new...i am very anal about following directions. Once I am comfortable with it...I start changing it to my specs.

As to the original purpose of the thread, for jello, I would measure, can't judge one or two cups by instinct like Claire. If you don't get it right, it's too firm or too soft. Spoonfuls I can do by hand.

I only measure when I bake...other than that I don't see any sense in it. When I make tomato sauce (gravy) everything is done by hand measurements or smell.

Speaking of...I need to make some in the next week.
