Help required with something to eat with Couscous!!!

I'm cleaning out the cubboards and i've worked out i have 2 bags of couscous and its pretty bland on its own!!

Anyone got any ideas of what i can make to use this stuff up or do something to actually give it some taste.

Please don't suggest the bin...laugh

Kinda hard because I don't know what you like!
Here's something on the simple side...

1 Tbsp butter or margarine
1/2 medium onion, sliced (about 1 cup)
2 medium green bell peppers, diced (about 2 cups)
4 medium cloves garlic, crushed through a press
1-1/2 cups water
1 cup precooked couscous
Salt and freshly ground black pepper to taste

Instructions:

Melt butter in a nonstick saucepan and add onion. Sauté gently for about 10 minutes, or until onion is golden. Add green peppers and garlic and sauté for another 5 minutes. Add water and bring to a boil. Stir in couscous, cover, and remove from the heat. Let stand for 5 minutes. Fluff with a fork and add salt and pepper to taste.

Thanks for that! I've done that type of thing before and added lemon to spice up the couscous and if all else fails pretty much what you typed is my default recipe for using it all up!

I wonder if theres any way of using it and making something really tasty?

I'm a pretty good cook but i'm on a mission to completely clear the cubboards before the end of the month!

I forgot about this one, it's good too, for breakfast...

2 cups skim milk
2 tablespoons honey
ground cinnamon to taste
2 cups dry couscous
1/3 cup chopped dried fruit, you choose
1/3 cup raisins
sugar to taste if you'd like


DIRECTIONS


In a saucepan over medium heat, combine the milk, honey and cinnamon. As soon as it comes to a boil, stir in the couscous. Turn off the heat, cover and let stand for 5 minutes. Stir in the fruit, raisins, and almonds.

Here's a salad... You can use a different meat if you don't like tuna

Ingredients:
1/3 cup uncooked couscous
1/4 cup red wine vinegar
2 Tbsp. olive oil
1 Tbsp. Dijon mustard
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. sugar
1/8 tsp. garlic powder
2 green bell peppers, chopped
1 cucumber, peeled, seeded and chopped
1 sweet red onion, chopped
1/2 cup golden raisins
6 oz. can chunk albacore tuna, drained
11 oz. can extra sweet corn, drained

Directions:
Bring 1/2 cup water to a boil in a medium pan: stir in couscous. Remove pan from the heat; cover and let stand 5 minutes. Fluff the couscous with a fork and set aside.
In medium bowl combine vinegar, olive oil, mustard, salt pepper, sugar and garlic powder and stir to blend. Add the couscous, bell pepper, cucumber, onion, raisins, tuna, and corn. Toss to coat. Cover and chill for at least 1 hour to let the flavors blend. Serves 6

There's a good idea!! i've never tried that so i will definately give that one a go as its a candidate to use the stuff up in a new way, which i'm also keen on trying!

One more simple one...

Lemon Mint Couscous

Ingredients:
6 oz. couscous
2 tablespoons lemon juice
3 Tbsp. olive oil
1/2 tsp. salt
1/8 tsp. white pepper
1/4 cup finely chopped fresh mint
1/3 cup chopped pecans, toasted if desired
Directions:
Prepare couscous according to package directions. When done, fluff couscous with fork and add remaining ingredients. Stir very gently with a fork and serve.

Lemon and mint together is pretty good.

The simplest and tasty Dahl recipe assuming its yellow dal is :

Take some oil in a frying pain and using the same spices as for bombay potatoes .. but in slightly lesser quantity i.e. poppy seeds , asafoetida , fenugreek and little garlic in say 1 tea spoonful of oil for a prepn of 2 servings to begin with.

Once the spices seem fried ( say about 30sec on the flame ) add the precooked ( cook the dahl till its soft and make half of it in to a paste )
dahl in to the frying pan .

Add curry leaves if you like .. then red chilli powder , salt , turmeric and 2 drops of lemon .. everything as per taste.

There you go .. you can have it with rice or bread or even as such.

I'll experiment tomorrow but i'm pretty sure the mixture will be perfect the 1st time! and i have fresh tomatoes i need to puree to ill knock up a batch and see tomorrow!!hug

You use couscous in anything you would normally use rice in...it just cooks up super fast so adjust your cooking time accordingly (cooks in about 5-10 mins when added to boiling water) Hope this helps! wine

3/4 cup canned dark red kidney beans, rinsed, drained
3/4 cup chopped fresh or canned whole tomatoes, drained
3/4 cup salsa
1/3 cup whole kernel corn
1/4 cup chopped green bell pepper
3 garlic cloves,crushed
salt peper to taste

This is a fav of mine,and its simple...:)
