Bacon Spaghetti

Cut 1 lb of bacon into about 1" pieces & fry it. While that's frying, cut 1 vidalia onion. Take the bacon out of the frying pan & drain most of the grease, leaving enough to saute the onion. When the onion's transparent, add the bacon, along with 1 big & 1 little can of diced tomatoes, with some of the juice from the can. Add garlic (probably about 2 cloves), salt & pepper. Cover & simmer.

Boil spaghetti noodles in a pot. Drain spaghetti & combine with sauce.

Wikked dear, you were far too shy with me and in offering something from the fridge, I didn't peek to see what I could muster up.....

But at least, I played you some guitar and sang along with all the other beautiful CS'rs that were there.....

Thanks for the recipe sweet owen. I think someone should call you sweet oven!!!

If you use your recipe and lose the tomatoes and select german eggs noodles as opposed to pasta, you get spatzle.......and it is so devilishly delicious!

Chicken in a Wine and cheese sause


In a large skillet cook 2 chicken breast
Remove chicken when done
deglaze pan with white drinking wine
Add 1/2 and 1/2 plus milk or light cream to wine plus your fav.
block cheese cut into cubes
simmer till melted and mixed well
Return chicken to sauce and simmer for about 30 min.

Serve over lemon pepper fetticini.

Recently....let's say New Year's Eve, I cooked a duckling.

I stuffed it full of Morocaan oranges ( for season's sake!) and then "flowered it up" with a seasoned flour I put together. (pick your own seasonings....)

Roll your duck with love in the seasoning flour you have laid a bed for.

Take chunk of butter ( never one two recipes alike! for measurements and a "splurt" of olive oil, then heat them in a pan about mid-range. Add duckling and revolve and move according to browning the entire bird.

Once browned, take drippings from bird from the sauce pan and pour within the bird.

Add into a large, deep dished covered pan with a splash of wine vinegar, a chuck of sugar, squeeze a lemon and make bake at 350. F.

Enjoy!!!

Beautiful food is not always about cooking.

Sometimes all you have to do is add together, some tasty ingredients;

Today's Lunch

Schikenbrot (black rye bread)
Slices of swiss cheese (today, mine was Kaltbach cave aged)

Toast the two in oven

add,
2 slices roast beef
1 romaine lettuce leaf
spread on Dijon mustard

Results: 1 delicious sandwich

You work wonders in a kitchen mon ami,
but most importantly you bring that comfort to the soul,and thats really what being in the kitchen is really all about.

Last nights dinner was,
Eggplant,zuccinni,mushrooms,red,green and yellow peppers,onion and tomato,all grilled,
with basil and garlic pesto,
tossed over fettuccine noddles.

drizzle some melted butter over

Here is my recipe for easy asparagus;

Line up the veggies, side by each on a plate with a glob of butter. Cover with plastic wrap but with slight opening. Place in microwave on high for one minute and the asparagus steams itself in butter.

Remove from oven and add almond slivers....

Pure yum.
