Tumpa: I love to cook...it is one of the spices of life.

I recently attended a cooking class called Indian treats and treasures where we learned some enticing entrees and appetizers.

Here in my thread, I invite all to post their tantilizing trades and tricks....

Happy cooking, baking and especially warmth in the kitchen everyone!!

Spanish style sardines...serves 2.

4 sardines
Sea salt
1 lemon halved

Gut the sardines but leave on the heads and tails.
Slash each of the sardines´ sides diagonally three times.
Place the sardines on a grill and sprinkle with sea salt
Grill for 4 minutes on each side until the fkesh is cooked and the skin blistered and a little charred.
Serve at once with the lemon halves to squeeze over.

My client brought lunch for me. I have since served to many friends.

Chicken Salad

chicken

grapes
almond slivers
water chest nuts
curry
soy sauce
little mayo
Sever with crescents.

Bean Salad...A fav of mine...YUM!
-Kidney beans,chick peas,romanio beans,
-red onion,cumcumber,tomato and chopped and diced,
-fete or goat cheese,
-tossed with greek fete dressing,or a olive oil,red wine vinegar with fresh garlic mixture.
And enjoy!

Chicken breasts marinated,I did it over night,with a lot of fresh crushed garlic,MMMmmmm,something stimulating about the aroma of garlic cooking in your home.heart beatingcracked black pepper and fresh basil.

Pour a can of Campbells cream of chicken soup in a caserole dish with half a can of white wine,put the chicken in sauce and bake.

Was served with mashed potato,with the chicken sauce and sweet corn with butter,but have your own choice of sides ....laugh

You know what my 'favortite sides' are....

For some time now, smoothies are a morning starter and dead easy to do. I switch it up for different flavours but this morning's scrumptious smooth was this;

cup of strawberries
yogurt
splash of mango juice
splash of milk
splash of soya milk
half a banana.....

Dknew: Chicken in a Wine and cheese sauseIn a large skillet cook 2 chicken breast
Remove chicken when done
deglaze pan with white drinking wine
Add 1/2 and 1/2 plus milk or light cream to wine plus your fav.
block cheese cut into cubes
simmer till melted and mixed well
Return chicken to sauce and simmer for about 30 min.

Serve over lemon pepper fetticini.

but most importantly you bring that comfort to the soul,and thats really what being in the kitchen is really all about.


Last nights dinner was,
Eggplant,zuccinni,mushrooms,red,green and yellow peppers,onion and tomato,all grilled,
with basil and garlic pesto,
tossed over fettuccine noddles.

Last week I made some eggplant parmigiana as a side dish. My tomato sauce included pretty much those ingredients you mentioned above.
