French Beans with Walnut Oil
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Serves: 8

Ingredients
750g (1½ lb) French beans, topped and tailed
5 tablespoons walnut oil
radicchio leaves
sea salt
1. Steam or boil the French beans in boiling water until ‘al dente’, for 5 minutes.

2. Dress with quality walnut oil, pile into nest of radicchio leaves, sprinkle with sea salt.

OR ANOTHER GREEN BEAN SALAD:

5 lbs fresh green beans (if you can swing it)-trim the ends and cut in half

1 tbsp salt
1/2 tbsp pepper
1/4 c. olive oil
1/3 c. white wine vinegar
2 tbsp dijon or honey mustard
1/2 red onion (sliced into halfmoons or slivers, as small as you can get them w/o cutting yourself.)

Boil a good sized pot of water. When it is at a rolling boil - add the trimmed green beans and let cook for about 3 minutes, drain the beans and let cool a smidge. Mix the salt, pepper, vinegar, oil, and mustard together.

Toss onions, beans and dressing together. serve warm or cold. I also like throughing a pint of cherry tomatoes into the salads for a little extra color.

Here's a recipe I use almost every holiday season.
They're called porcupine meatballs because they have rice in them.

Porcupine Meatballs ~Serves 4

1lb. lean ground beef
1/3 cup uncooked long-grain rice
1/4 cup chopped onion
1/4 water
1tsp salt
dash of ground black pepper
1 can tomato soup
1/2 tsp chili powder
1/2 cup water

Combine the cooked ground beef,rice onion,1/ cup of water,salt and pepper together in a mixing bowl.

Then shape mixture into 12-15 meatballs place meatballs in a 8x 8 in baking dish.

Combine the soup,chili powder and 1/2 cup water in large saucepan;reduce heat,cover and simmer for 1 hour over very low heat.Stir occasionally.

Pour soup mixture over meatballs and bake in a 375 degree oven until done.

Festive Meatballs
Combine all the ingredients in a large bowl:Place meatballs in a 8x 8 or 9x 13 baking pan. Bake in a 400 degree oven until cooked all the way through.

1lb Italian Sausage
1 egg
1-1/2 cup plain bread crumbs
1/2 cup diced red pepper
1/2 cup diced pepperoni
1/4 cup chopped green onions,green stems only
3 Tablespoons parsley
1/4 teaspoon garlic powder
1/3 cup celery salt

For those who still hold to the custom of making fruitcake every Christmas, I have found a WONDERFUL recipe guaranteed to be the best you ever tried. Be sure to read the directions VERY carefully, then... Enjoy!

Christmas Whiskey Cake

1 cup butter
2 cups sugar
6 large eggs
2 tsp. baking powder
3 cups flour, sifted
1/2 tsp. salt
1 cup Bourbon
1 pound pecans, chopped,
3 cups white raisins or candied fruit
1 tsp. nutmeg
AND... A very large bottle of good bourbon whiskey

First, sample the whiskey to check for quality. Assemble all of the ingredients. Check the whiskey again. To be sure it is of the highest quality, pour one level cup and drink it.

Repeat this step.

Turn on the electric mixer and beat one cup of butter in a large fluffly bowl. Add one teaspoon sugar and cream until beat. Make sure the whiskey is still okay... Try another cup.

Turn off the mixer. Beat six leggs and add to the bowl, then chunk in the cup of dried flute. Mix on the turner. Throw in two quarts of flour. Gradually pour in the cow. Add two dried anything. If the fried druit gets stuck in the beaters, pry it loose with a drewscriver.

Sample the whiskey again and check it for tonsistency.

Next sift two cups of salt or something... Who cares?

Check the whiskey again.

Now sift the nutmeg and your nuts. Add one table. And the spoon... Of whiskey, or something. Whatever you find left.

Cour another pup of viskey and spoon your mouth into some.

Grease the oven. Turn the crake pan to 350 degrees. Don't forget to beat off the turner. Pour the oven into the batter. Throw the bowl out out the window. Lick the batter off the floor, being careful not to will the sphiskey. Bake 300 minutes at 50 degrees. Finish the bobble of whishky and go to bed.

My favorite way to cook a turkey

Quarter a lemon and an onion and about 10 sage leaves and stuff inside the cavity of the Turkey.

Then mix up butter and minced sage and massage it under the skin of the turkey as well as all over it and salt inside and out.

Roast in the oven at 350 degrees for about 3 1/2 hours for 13 to 18 pounds 4 hours up to 22 pounds

I start the turkey with the breast side down for the first hour and a half... this allows the juices to catch in the breast meat and stops the breast from burning. After the first hour and a half turn the Turkey breast side up and continue cooking.

Make sure you use a roasting pan to catch all the juices to make lovely homemade gravy.

A large measure of whisky

2 teaspoons of brown sugar

pour black coffee to three quarters of the way up the glass (no instant coffee crap)

Warm up a tablespoon in hot water and pour into glass whipped up double cream over the back of the hot tablespoon.

Should look like a pint of Guiness.

One or two of these and you will sleep like a babe.

1 shot Royal Bahamian rum
1 shot Kalua
Fill mug with good strong coffee
Top with whipped cream and chocolate shavings.

Hot Mexican Dip (some call it Walking Taco)

1 lb. ground beef
1/4 cup diced onion
1/3 cup taco sauce
1 can refried beans
1-1/2 cups Monterey Jack cheese
Shredded lettuce
1 medium tomato, diced
Sour cream

In a large skillet, cook onions and ground beef; drain and return to pan. Stir in taco sauce, beans and 1-1/4 cups of cheese, and heat, stirring occasionally, until cheese is melted. Pour over a layer of shredded lettuce in a serving dish, top with fresh diced tomato, dollops of sour cream, and remaining cheese. Serve with Fritos and/or tortilla chips.

Great for the upcoming Super Bowl festivities!

to this add ,,,after the stew is cooking good add a bunch of dumplings with two heaper tbl spoons of curry powder cook for 25 minutes curry pdr mixed in with the dumpling mix,,,after you eat this stuff you will stink a bit and not have a lot of friends around but eating it will be worth it.my grand father brought the curry habit home when he left india in the 1870 s or so
