When you make jam you need to use the right amount of sugar dont skimp use good quality sugar you also need to use pectin the powder variety is the best make sure your fruit is ripe too
there are stax of good jam recipes follow them to the letter you cant go wrong .

You can always have a jam party and make lots of things using jam laugh

my dad used to make these things (don't think they have a name) when we were kids for dessert and we loved them. Being english and growing up when times were hard, my dad's family as most english families did, had to find ways to make something tasty to eat out of nothing.

Recipe: make some jam sandwiches (without butter) and cut off the crusts. Make a batter out of plain flour, milk and an egg. Dip each jam sandwich into the batter and deep fry them. Have them with hot custard. Very YUMMY and extremely cheap to make grin

laugh yeah I know .. haven't had them for years for that very reason!.. but you have to try them at least once ..just drain them on paper towel before you cover them in custard laugh

astoneinariver: i would love to know ,how you make the jam thick,i had a whole heap of plums,so i thought i,d make some jam,i bought some jam setter,but its still runny,maybe i can pour it over ice cream,anyone got any clues?


500g plums or any soft fruit (pitted and diced)
1 2/3 cups sugar
1 1/2 tablespoon Jam Setta

mix over low heat till sugar melts
Simmer for about an hour stirring frequently.
You should find it will get thicker the longer it cooks. Test by dropping a little bit on a chilled plate.
You could also try putting in a few of the pips as they contain pectin which they used to use before Jam Setta.

Another one.
6 kg plums
4.5 kg sugar
1/2 cup of water

Prick or cut plums and add water.
boil until tender.
Add sugar and boil quickly until jell point. (chilled plate test)

All the same, I must say I am impressed at the effort!!
There are a no. of factors, which during the cooking process can have an affect on the jam's ability to set e.g. not enough pectin, acid level, or over cooking ..

Below is an excerpt from article i had cause to refer to recently (you might find it helpful):
"People have different perspectives on fixing a jam that does not set. You can add more pectin to a soupy jam...dump it all back in the pot, add a little sugar and lemon juice, and reboil. If it doesn’t set up the second time, just re-label it 'Pancake Sauce,'"

or ...you could add a few spices and use it on roast lamb! Good luck
