Rather be honest. Why try to impress with a skill you don't have? Any lie will turn against you in the end. If he does not see past your shortcomings and appreciate your qualities, he's just not worth it.
But if you're so concerned, you could learn. There's a beginning for everything.

He is aware that I'm a lousy cook, I confessed to him.
I've never liked cooking and that's not really a norm for an Asian woman. All my girlfriends can whip up a storm at a moment's notice

No, chicken creeps me out even more than women do, so not every day.
I can't see him expecting you to cook every day, so take turns, share the duties, and eat out when you both feel like it. It's not that difficult, and it isn't the end of the world.
