Perhaps some dinos were still alive for humans to see and tell stories about. Or..they found the eroded fossils and were so amazed, they created art in their image. We find frozen mastodons and mammoths. They existed with humans til humans ate them all.
Is it possible that there were dried or frozen carcasses of dinos that prehistoric humans found?
This shows the difference between a Mammoth a Mastodon & a modern Elephant.
They might have been the only food source during winter and your ancestors could have died out and you never existed without eating them or maybe they were just delicious, like Doritos you can’t just eat one

I would say that it could be a reasonably good copy of the animal based on the fact that the horses and elephants are quite accurate in some other carvings.
The other thing I noticed is that they surround most of their carvings with a string of carved stone shapes. So maybe those are not backbone extensions but decorative flat stone shapes added to fill the gap. Who knows, I certainly don't.
