NYC DELI STYLE POTATO SALAD
INGREDIENTS:10 pounds potatoes
3/4 cup sugar
3/4 cup water
3/4 cup white vinegar
3/4 cup vegetable oil
1 pureed or finely grated onion
1 tablespoon pepper
1 tablespoon salt
Mayonnaise
1 or 2 hard-boiled and chopped egg/s (optional to thicken)
parsley and/or grated carrot (optional to garnish/color)
DIRECTIONS:
01 - Peel and wash potatoes!
02 - Steam or cover potatoes - and egg/s - in water and boil!
03 - While the potatoes are cooking, mix the next
seven ingredients - adding oil last - in a mixing bowl!04 - Egg/s should hard-boil within five minutes. After ten to
fifteen minutes of boiling time, poke a potato with a fork to
verify firmness! Avoid over-boiling as this will create potatoes
too soft for slicing and best used on a mashed potato recipe!
05 - Once potatoes are sufficiently boiled, slice
them in quarter-inch slices onto a large bowl!
06 - Pour and fold in the above mixture!07 - Add mayonnaise - and optional
chopped egg/s - to desired consitency!
08 - I recommend parsley and/or
grated carrot for garnishing/color.09 - As this is a cool-temperature salad, chilling overnight in
the refrigerator is suggested... but certainly not mandatory ;)
