1 Pumpkin ( About 10-11 Pounds)
2 Pounds Of Dark Brown Sugar
2 Tablespoons Pumpkin Spice
9 Whole Cloves
1 Teaspoon Cinnamon

2 Pounds Flour
1 Cup Vegetable Lard
1 Egg
1 Teaspoon Salt
1 Cold Beer : )

Cut The Pumpkin In Half And Take Out The Seeds. Slice It Into Small Pieces And Boil Until Soft.Take The Pieces Out Of The Water And Allow Them To Cool. Peel The Slices And Mash Into Pulp.

Add The Rest Of The Filling To The Pumpkin Pulp. Cook for 3 1/2 Hours Over Med Heat Stirring Every 3-5 Min. To Avoid Burning. Remove Cloves

Mix The Flour, Salt, And Lard Well. Add The Eggs And Mix Well. Add The Beer To To Make Dough Soft And Pliable. Shape Into Small Tortillas.

Put About 1 Tablespoon Of Filling Into The Center Of Each Tortilla~ Fold The Tortilla Over And Seal The Edge By Pressing With A Fork Or Your Fingers. Preheat Oven To 300 Degrees And Bake The Empanadas For 20 Minutes Or Until They Turn Brown .

Roll Warm Empanadas In A Brown Sugar And Cinnamon Mixture Until Coated~
