Erm, silly question, but how do you know if a so-called mouldy cheese, for example a Danish Blue, is ok, or has actually gone mouldy? The one in my fridge is kinda winking at me at the moment.
That's the trouble with living alone, whenever you buy food you have to eat some every meal for 2 days or it goes off. Hate it when supermarkets pre-pack things, like bags of apples. I can't eat 24 apples in 2 days.

It is more expensive to buy a whole bag of apples and let some go bad because they are too many, besides their quality might be not the best (fresheness, life shell, etc.).
I do prefer to buy a few apples of one variety like "Gala" and a few of another one like "Granny" but if you buy a whole bag they keep well in the refrigerator (veggies place) or they can be cooked alone or with some honey and cinnamon and be used later on some other dishes or freeze it as a last resource.

I do not buy much cheese but I would get the small size for blue (Gorgonzola) and other types but I do check their expiration date and usually they have plenty of time to be used in a safe way.

When ever in doubt trow it away, no sense to take any risks with cheese, meat or any other food which might represent a hazard for your health.
