ooby_dooby: I have 1 lb of dry navy beans I will soak them over night. What's next and please keep it SIMPLE.
Boil, liquidise and season..salt pepper, marjoram ...whatever takes your fancy....fresh mint is good and you can dress the soup with fresh whole leaves. Yum
Add some chunks if meat to abot a gallon of water Boil till meat is getting tender, add beans and every seasoning in the cabinet, but just a little of each, continue cooking till beans are tender but not Mushy.......
Then Enjoy
The Most critical thing!!!!! is DONT have a Date lined up till the gas has Past!
Put some ham chunks in with the beans, season to taste, cover with water, and turn on the fire. Cook over a medium heat, stirring frequently, until the beans are thoroughly cooked.
That's what I'm making tomorrow, except I make 20 quarts at a time. When it's done, I'll whip up some biscuits and we'll enjoy ham and beans.

Thanks for the tip and I will follow your advice.
Sophie, I raised 2 finicky boys and I've come to the conclusion if it doesn't come from MacDonalds it's not edible. Luckily they wont be partaking of this awesome bean soup I'm gonna make. BTW I like vinegar in my bean soup also.
My next project will be Kartoffelsuppe (potato soup).
Oh obby this is how I cook them... I use a ham hock, for flavor with lots of bits of ham.....cut up an onion and cook it to death with the beans and ham....add salt and at least three cloves of garlic....cook slow half the day...thicken to your taste.. Basic for house special at our local restaurant...got to have the meat, onion, and garlic for perfect flavor...
Ooby, I wish my daughter and her family liked eating away from home more often. They eat out a couple times a year. They prefer my home cooking, so I do a lot of it.
I love potato soup! I especially like it with wild leeks. Store-bought leeks just don't have the intense flavor of the wild ones. I also like turnips in potato soup.

I know that's right....and if ur in the South we could cook up some cornbread to go with that pot of beans....<smile>

Chop some streaky bacon and fry over a high heat.
Chop some onion and continue frying over a low heat (sweat) otherwise the onion will be cooked only on the outside.
Add potatoes, pumpkin and celery, all diced. Next add the beans, (I love chick peas) and gently fry for a few minutes. Top with hot water to cover. Add to taste, red hot chili, white pepper, chicken cube and simmer for 45 minutes.
You can use a blender to liquidise partially or completely. Serve with a touch of Worchester shire Sauce, EVOO and some grated Parmeggian cheese.
I love to cook beans in a crock pot{or you can refer to it as a slow cooker}...Soak beans overnight ...the next day put them in the pot along with ham{you can add chunks or use the bone},don`t forget onion and liberal amounts of garlic ....If you are inclined to use salt just remember that ham contains lots of salt already. Add water as needed.....add bell pepper for added taste ...Adjust the heat to low and cook most of the day.The beauty of the crock pot is you walk away and go do something else while brewing up this delicious meal.Corn bread works really well with beans.
I don't think of navy beans as being a good soup bean. Basically you make bean soup the same way you make stone soup, a little of almost anything you have. Ham or beef is good with dark beans like black beans or red kidney. I like great northern (white beans) with chicken and I'm thinking of trying adzuki beans with a fish soup sometime.
You can't go wrong adding your favorite vegetables meats and spices to a soup (within reason). Just time adding them with how each thing cooks. Longer cooking things in first, short cooking times in last.
