I am sitting here with the gentle muffled roar of the food dehydrator purring away in the background. The air is scented with drying beef jerky. It is marinaded in light soy, lime juice, lots of very very hot chillis and chilli sauce (habaneros for those who know chillis) after 24 hrs of marinade i drained the strips and then coated them with dried chilli flakes (inc seeds) and it is wafting around teasing me terribly. Yes it is a pity that we have to wait until the dehydrator does its job.

I have never heard of a food dehydrator... guess I really am a townie... but your recipe sounds very nice... cheers

Sounds great, i will have to try it. I haven't used my dehydrator for ages.

A tip, don't do strawberries in there, they are far to yummy and you or someone else will eat them all at once. LOL

PS You didn't mention if you cook the beef first?

All the men i have met lately don't like chilli, shame because it's part of my diet.

A south African friend at work makes her own biltong - and it so good - brings back a lot of my childhood memories of living in Zambia and travelling to Rhodesia now Zimbabwe and alse travelling to South Africa. Food has so many associated memories - I just love food lol.

I tend to not make jerky very often, it is so bloody moreish that I usually eat it all within a couple of days. Not sure about the benefits of that much protein, mind you the chilli is good for me.
