Is it sponge fingers or sponge cake you're using?
Sponge cake absorbs more and wont float. you have to use more sponge fingers to absorb the same amount of jelly.

You could always put the fruit on (carefully) before the jelly sets and use it to weigh the sponge down.

am thinking about mini edible anchors.....what about stuffing a few jelly babies in the sponge....they are edible and made of jelly so a win/win I reckon!
