I recommend to use this dish ...at the third date dinner (not before is a little heavy..it might cause sleepiness)
In a skillet, brown the sausage without casings, I like it crispy, then add the mushrooms, white wine, garlic + onion, to make your job easier I'd use porcini mushrooms ready blowing them in a pan with the sausage so they are immediately ready and tasty, almost cooked, add the noodles and mix together, season with pepper cheese and a bit of parsley, to quench your thirst ..I would use a good red wine.
My best wishes for the rest of the evening
For two
200 g of Tagliatelle
  125 g of sausages
  40 g of porcini
  30 g of onion
  1 clove of garlic
  30 white wine

30 g of grated Parmesan cheese

  salt
  pepper
  parsley (optional)
  olive oil

You also use the same basic recipe with diced Italian sausage, chopped kale, sliced Hungarian hot peppers instead of mushrooms and sauteed in olive oil. No white wine, no onions. cheers

The first date is when one notices if she's vegetarian.
