The concept of ether was disproved in the late 19th century by the Michelson and Morely. It was one of the first thing they covered in that set of lectures because for some reason there are people who won't let go of the concept of ether.
The most supportive, real-world and relatable piece evidence that I can think of regarding relativity is that timing on GPS satellites has to be adjusted using relativity in order for them to stay accurate. There are many more but to list them all would take up to much time and space.
Relativity contradicts Newton's Laws of Motion but they are still valid in most situations and I wouldn't send my child to a school that didn't teach them.
Relativity has recently been contested by scientists that measured the speed of some sub-atomic particles to be greater than the speed of light.
My point is that if you are thinking of science as body of facts then you really don't understand what science is in first place.

Even Einstein later had to revise his position and accept the existence of ether. His own theories called for the twisting of space by gravity. But if there was nothing but empty space between bodies in space, there would be nothing to twist. Gravity could have no effect. The very concept of space-time requires that space be composed of something rather than nothing.

Personally I suspect that Steven Hawkings is just being used as a living marionette and that everything attributed to him is actually planned out and prepared by others.

Hawkings however is insulated from such situations. There could be a whole team of people and computers speaking for him. Hawkings is the visible wizard, but can't be put on the spot. Who knows who's really behind the curtain?

Apart from your paranoia, which you probably don't acknowledge, you have answered your own question, there is not nothing between matter in space, it is cluttered up with many dimensions including space and time all of these interact with gravity.
