tomcatwarne: 4 boneless, skinless chicken breasts, cubed
3cm piece fresh root ginger, peeled and chopped
2 garlic clove, chopped
1 tsp mild chilli powder
2 tbsp fresh coriander, chopped
juice of 1 lime
2 tbsp vegetable oil
1 onion
1 red chilli
1 tsp ground turmeric
284ml carton double cream
juice of ½ lemon
basmati rice and naan bread, to serve

Put the chicken, ginger, garlic, chilli powder, coriander, lime juice and 1 tbsp of oil in a bowl. Stir, and set aside. Chop the onion, and seed and chop the chilli.

Heat a large shallow pan. Tip in the chicken and marinade and fry for about 6-8 minutes, stirring occasionally.

Meanwhile, heat the remaining oil in a pan and fry the onion and chilli for 3-4 minutes until just soft. Add the turmeric and stir fry for 1 minute. Lower the heat, pour in the cream and simmer for 2-3 minutes.
Add the chicken and simmer for 5 minutes, or until cooked. Season and stir in the lemon juice. Serve with rice and naan bread. This is a very mild but tasty curry, experiment.

wave Thank's Tom, I just wrote that out, will try it on the weekend.

cheers I will. It was around when I was a kid, as my Grandfather was
in the British Army for 35 years(1935-1970), Naturally stationed in
the Middle East and Ceylon. So it was around a lot, but as a finicky
kid I did not touch it. Thank's again.

I love curry.
Though I will confess Thai curry is very different from West Indian curry which is what I grew up on.

Curry, for me, really was an acquired taste. I prefer a mild curry though. I often time do contract work for different Indian families in the city. They always incorporate spice kitchens into their new home where they do the cooking and mix up their spices for their curries. I at first found this strange as the main kitchen never gets used and seems to be in the house as a show kitchen. I asked one of my good customers why this was and they responded that this is so for resale value of the house because if the main kitchen is used for their style of cooking it is almost impossible to eliminate the odor from the spices they use in their foods.
