I have a rum cake recipe but it's too long to type the instructions. I don't have a scanner to scan it into the computer.

Santa doesn't need any feel good drinks. He may get lost and miss some homes. Or get stuck in the chimney.santa He has work to do, then come the 26th of Dec. dancingsanta he can dance all he wants. grin

Hiya Felix wave This is a nice rum ball recipe I've been using for many years...I usually juice it up with a bit more rum than it calls for. giggle dancingsanta

2 cups of chocolate wafer crumbs
1 cup of ground walnuts, brazil nuts or pecans
1/2 cup of icing sugar
1/3 cup of rum (I use Jamaican dark rum)
3 tablespoons of corn syrup

Coating ingredients:

1/2 cup of chocolate chips
3/4 cup of candy sprinkles (I use chocolate sprinkles)

Mix everything but the chocolate chips and sprinkles in a large bowl.
When everything is blended, scoop out enough to make one inch balls (makes about 3 dozen).
Refrigerate them till cold.

Melt the chocolate chips and cool slightly then carefully roll them in the chocolate and then into the sprinkles.

thumbs up I do the same with my rum cake. After it comes out of the pan I drizzle about half a cup of rum all around it. Then let it soak it up for a few days. I used to take it to work and always put a sign on it that it has real rum. That was meant for people who shouldn't drink.

I had a piece of rum cake done that was soaked in rum before and let me tell you, I was quite blitzed. laugh

Mulled wine.

2 clementines
1 lemon
1 lime
200 g caster sugar
(I would use honey instead and only half of it)
6 whole cloves
1 stick cinnamon
3 fresh bay leaves
1 whole nutmeg, for grating
1 vanilla pod, halved lengthways
2 star anise
2 bottles red wine

Peel large sections of peel from your clementines, lemon and lime using a speed peeler. Put the sugar in a large saucepan over a medium heat, add the pieces of peel and squeeze in the clementine juice. Add the cloves, cinnamon stick, bay leaves and about 10 to 12 gratings of nutmeg. Throw in your halved vanilla pod and stir in just enough red wine to cover the sugar.

Let this simmer until the sugar has completely dissolved into the red wine and then bring to the boil. Keep on a rolling boil for about 4 to 5 minutes, or until you've got a beautiful thick syrup. The reason I'm doing this first is to create a wonderful flavour base by really getting the sugar and spices to infuse and blend well with the wine. It's important to make a syrup base first because it needs to be quite hot, and if you do this with both bottles of wine in there you'll burn off the alcohol.

When your syrup is ready, turn the heat down to low and add your star anise and the rest of the wine. Gently heat the wine and after around 5 minutes, when it's warm and delicious, ladle it into glasses and serve.

hi no joking.my grandfather....would put a poker into the fire...till white hot....then put it into his beer.....(stout)....and enjoyed it......true.
