Made 2 Pumpkin pies the other day ( Archived) (10)

I wanted graham cracker crust but didn't feel like going out to the store so I made my own out of Cinnamon Graham crackers. I put a little water on a dinner plate and laid the Graham cracker in it for about a minute. Once it got soft, I picked it up with a spatula and placed it in the pie tin. I built the whole crust like that it took about an hour to make 2 crusts and I let them dry for 2-3 days. They looked like mozaic art work. Then I made the filling using Pumpkin I prepared last Thanksgiving from real Pumpkins and had frozen. I used my own blend of spices. I put one pie in the freezer and one in the fridge. I'll try it in the morning with a hot cup of coffee.

I guess there are no bakers in here.dunno
Anyway, this AM I was pleasantly surprised at the outcome of the Pumpkin pie. I expected the crust to be very crunchy but instead it was soft and tasty. The added Cinnamon was interfering with my spice blend though. Next time I will use plain Graham crackers instead. I can finally say that my Pumpkin pie is MY creation which I was unable to say before by using store bought frozen pie crust.
I once bought a Pumpkin pie from Walmart and it was so bad I couldn't even eat it and gave it to the chickens. That is about the difference between my Pumpkin pie and anything you can buy that is mass produced.

My next goal will be to bake a Rhubarb pie. Not Strawberry/Rhubarb but straight Rhubarb. As usual I will start with a recipe from my 1920 "Settlement Cookbook" and go from there.
Stay tuned.

Do they have Pumpkins in SA? If so you should get one and I'll give you my recipe. A Pumpkin about the size of a Soccer ball will yield enough to make 4-6 pies.[/quo

I love pumpkin pie. I have a no-fail recipe which I use with sweet short crust pastry.

The pie is lovely, hot or cold, served with lots of cream....smitten smitten

I'm not too sure about that pastry. Whatever pies I make would have a short crust pastry......baked blind in the oven.

Quaker Oats
have agreed to pay $1.85 million
to former residents of the
Fernald State School in Waltham, Mass.,

who were fed radiation-spiked breakfast cereal
in nutrition experiments during the 1940s and 1950s.

The settlement "is a recognition that
these actions were improper and a violation
of the civil rights of helpless children,"
said Alexander Bok, an attorney for the 15
plaintiffs who filed the class action suit
in December 1995.

Those children -- some of whom were mentally handicapped and some from troubled families -- were frequently used for medical and nutritional experiments without the informed consent of their parents.
