my daughter came over today and made me some salsa she had over the 4th of july weekend with her friends... i helpedgrin

she had me roast 4 ears of fresh corn on the cob on the BBQ...

along with a couple of jalapeño peppers...

she chopped up some scallions and a bunch of cherry tomatoes...

added a couple of avocados and WOW...

season with some salt and pepper or to taste...she may have put some garlic salt too

cut the corn off the cob n chop up the peppers...maybe a little lemon juice

it was awesome...i'm not very good at writing a recipe but i think you get the idea

Simple Salsa de tomate con Chipotle.

Place in a blender:
Garlic 2 to 3 cloves
5-6 Fresh tomatoes (any type)
2 chiles en Chipotle (canned) or more if you like it spice!!!
Salt to your taste

Blend it for a couple of minutes and you got a tasty salsa.
The same recipe can be done using roasted tomatoes and the flavor improves.

The above salsa can be used on some eggs, on chilaquiles (fried tortilla), with avocado (although the color -green+red- is not really nice), etc...

Both recipes sound great. I love chipotles and I make my own.

I'd go a bit further with either of those recipes by adding bell pepper (various colors) and red onion. Talk about tickling the taste buds. grin

lifeisadream: Cherry Tomatoes are the most flavorful ones. Some time ago I did import some “wild” cherry tomatoes seeds to USA and gave some seeds to a professor from a state University and he gave some seeds to a big commercial seed company and now those “wild” cherry tomatoes are being sown in many places in USA, sold by that company.

As for being here, I have been really busy with my work and I do not find the threads interesting enough at this time and the CS policy of deleting comments is not helping, I think.

Try the above recipe as it is and you will see that "more is less".

I do have some other recipes for salsa using fresh or "saute" onion all colors, white, purple and yellow. Bell peppers (Pimentos) I do not use them in Mexican salsas but I do use them por Italian sauces (pasta).

yes your right...

i've made this salsa a couple of time as of late...used mild green bell peppers but also tried with fresh jalapeño peppers finely chopped and not to many seeds

maybe will try the red onion now too...

been trying to eat more healthy and stay away from the ice cream...lol

salsa........yum! specially this time of year as we can get most ingredients from the garden or fresh in the markets. home grown tomatoes are the best! it's near impossible to make a good salsa with the gmo in canada.

This is tasty with or without the pineapple.

2 fresh mangoes, diced
1/4 cup crushed pineapple
1/4 red bell pepper, coarsely chopped
1/4 green bell pepper, coarsely chopped
1 jalapeno pepper, seeded and minced finely
2 tablespoons extra virgin olive oil
1 clove garlic, minced finely
1 shallot, finely diced
2 tablespoons chopped fresh cilantro
2 teaspoons fresh lime juice
salt and pepper (to season)

Mango Salsa.

3 ripe mangos, diced (see photos)
1 medium red bell pepper, chopped
½ cup chopped red onion
¼ cup packed fresh cilantro leaves, chopped
1 jalapeño, seeded and minced
1 large lime, juiced (about ¼ cup lime juice)
? to ¼ teaspoon salt, to taste


INSTRUCTIONS
In a serving bowl, combine the prepared mango, bell pepper, onion, cilantro and jalapeño. Drizzle with the juice of one lime and mix well. Season to taste with salt. For best flavor, let the salsa rest for 10 minutes or longer.

I do think differently, a thread can have several lines of conversations. Some people go humorous other more on the topic and I do not see them as opposite (not the best term to express it) to each other yet I do think CS should not erase-delete any comment or thread so everyone can see who we are.

Many people have left because the threads and people’s participation are not really for good discussion -supported on facts, research- and certainly how can someone base a discussion with a person plagiarizing info.

You can also see false facts being placed as threads' topics rather frequently.

Also you can see the:
You are my friend because you have attacked that person that “attacked” me” attitude and I will send you a birthday card giggle

I will disagree with everyone including my friends (would someone see it as an attack, perhaps), I am wondering if I would disagree with myself laugh not yet!

Still, there will always be interesting people anywhere to whom chat/relate.
