I would have some expectations, rather than jumping to conclusions.
If he said he was fit, and liked to work out in the gym, I would expect a nice body rather than a beer belly.
Conversely, if he said he went out every night and had a skinful of drink, I'd expect him to have a red face and beer belly.

To answer your question, we all make leaps of logic. Experiments have shown we are more likely to rely on stereotyping if we are cognitively challenged, in other words, if our minds are occupied with other tasks. It's a kind of survival function where we make quick decisions when we don't have the resources to weigh up information.
Of course, some people are more aware and skilled than others when it comes to weighing up information, but we all do it to some extent.
