Me also, but not pancakes...I make a perfect roast chicken and spoil with the extras...this requires me to prepare all the veg, cut the pots, cook them and prepared them for roast...the bird is in the oven, while I perform perfection of preparation...I want those roast pots to be fluffy and crisp,but they always aregrin

Today is "Shrove Tuesday", which traditionally means , making pancakes!
I like mine with lemon & sugar, but would be interesting in other fillings .

You can have pancakes any day. They're lovely with HB Vienetta ice cream (Icecream and chocolate log to those not familiar), and some raspberries and blueberries.

I'm prepping a dessert for tomorrow. hopefully delish and beautiful ! A sort of tiramisu with litchis, red berries, light whipped cream rose flavoured, with cristallised petals of rose (homemade!) on the top of it.

Blueberries with blueberry syrup or pecans or walnuts with maple syrup. I've heard peanut butter is tasty too.

A pancake (or hotcake, griddlecake, or flapjack) is a flat cake, often thin and round, prepared from a starch-based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter. In Britain, pancakes are often unleavened and resemble a crepe. Taken from Wikipedia.
Now this is a subject I can get into having made and eaten more than my fair share of these gastronomic delights, over the years. There have been times when they formed a greater part of my daily die, which perhaps goes some ways to explaining the extra roundness to my mid section, lol.
Sweet or savory pancakes? depending on the mood. Raised or flat, depending on the hunger levels, dainty pikelets or full pan sized fat, juicy, dripping with butter gastronomic feasts, ah....... the list goes on.
To start with, the humble crepe. Sweat version, egg, sugar milk and plain flour lightly whipped into a smooth runny batter and cooked fast, in a hot pan and as thin as possible till both sides are spotted and lightly browned. These make the most delightful rollup for all manner of fillings from a simple butter and golden syrup or maple syrup if one prefers to strawberries and whipped cream with a touch of vanilla and sugar to taste and all manner of imaginative mixes of sweat, delectable tasty fillings. Alternatively, fold the crepe and then fold again but not quiet in full half the second fold and place 3 or 4 overlapping on a large plate with the round of the crepe to the outside edge. Cover in either stewed or natural berries, my favorite would be the stewed and for added taste, a squirt of maple syrup in the stewing, drizzle the top with your favorite brandy or liquor and flambe before adding great dollops of double or triple thickened cream, then enjoy.
Thickened sweet pancakes.
Same basic recipe as the crepe but using a self raising flour or with the use of backing powder as a rising agent and mixed to a thick pourable batter. :) Cooked as either a large, medium or small pancake. The difference with these are waht you can ad to the batter before deciding on what topping to use. I like to add, individually, sultanas, banana's, grated apples, cut up peaches, stewed or natural or a combination of any of these. As a tasty extra, adding melted butter to the mix is also delightful and makes for a lighter pancake but is harder to flip depending on how much melted butter is added. Alternatively, puree the melted butter with the sultanas or dates work as well and add that to the batter mix for a flavored batter and subsequent pancake. The addition of culinary herbs like cinnamon, ginger or nutmeg can also add a delightful flavor to these wondrous and most versatile of foods. The thing about raised pancakes is they are so much more filling to the crepe so need less toppings to sedate the hunger pains, unless you have induced munchies in which case no amount will sedate the craving. :P
Savory crepes and pancakes.
Made the same as the sweet but by omitting the sugar.
Added taste sensations to these can be anything savory but some favorites are Parmesan cheese or any cheese but a drier cheese works best, diced olives, sun dried tomatoes, olive oil instead of butter, ham, corn, whole or creamed, bacon bits prawns or shrimps and any number of sauces, herbs and spices to enhance and add flavor to the plain crepe or pancake. The savory crepe can also be used as a alternative to cannelloni rolls but has the added benefit of all those extra flavors that you can add to the crepe that you generally just don't get from a standard cannelloni pasta.
Shallow frying thicker batters works well too.
I could go on but I am getting hungry just thinking about it all and don't need the extra pounds that all this could deliver.
Suffice to say,the humble pancake is one of my all time favorite foods especially because of its versatility and my creative concoctions that I combine with them. laugh
