DESCRIPTION Making homemade ravioli is easier than you might think, and so much tastier than any you can buy in a store. Plus you don't even need a pasta maker!
INGREDIENTS 2 cups all-purpose flour, plus more for dusting 1 1/2 teaspoons sea salt 3 eggs, plus 1 for the egg wash 2 tablespoons olive oil Ravioli filling of your choice
INSTRUCTIONS In a large bowl whisk together flour and salt. Make a well in the center of the flour and add in the eggs all at once. Mix together well using your hands. Add the olive oil and knead the dough for 5 minutes. Form into a ball and leave in the bowl, covered with plastic wrap for 30 minutes. Take a small piece of the dough and either run it through a pasta machine a few times OR use a rolling pin, some flour and a considerable amount of muscle to create a thin sheet. Cut circles out of the dough using a cookie cutter.

Most require a pasta machine or a LOT of kneading
I guess the eggwash is for brushing around the edges of the circles to seal them together once you've put the filling in

Hi serene You're Welcome Yes the eggwash is for sealing around the edges which works something like glue so the hopefully the pasta doesn't fall apart when you cook it in the boiling water.

I haven't used this recipe before it's all new to me.I used to buy the pasta already made up but the other night I was doing some searching online and ran across this.
Yes you bring the water to a boil and then cook the dough until it's no longer raw so to speak.
