The balloons start very early in the morning because of air conditions. When it is night time, they have to "ignite" their balloons and that IS AWESOME because they glow. Each glows at their own time so that others do the same, then you see each balloon flying high in a dark setting and that's very cool. There are contests, food vendors and people selling things that are symbolic to our state.
