Well, in case you taste them... I see you approve of my spelling concession. It's hard to translate, I know.

Can I send Macron to NZ and you can prepare him properly? In Colorado we have a delicacy called Rocky Mountain Oysters, harvested when young male cattle get their working parts removed. Do you do the same with your sheep? If you do, feed some to Macron. Maybe it will help.

I tore a piece. Fighting is rounds and this is round one.
1. Two day starter is not enough. I will be back as Swartznegger said.
2. More time for the leavening, and overnight for the dough.
3. The loaves were too soft and collapsed. Needed more flour.
4. I used a dutch oven; next time firmer loaves and in the oven will be better all sides.
5. The crust is fine, but a brush with butter will improve the top.

Yes, it's OK for a flat bread.

Round two in a couple days !

Now that it is cooled, neither of them. Tomorrow's project while I'm in jail will be to make a hearty chicken and vegetable stew, and this bread will suffice just fine.

So I will score myself 80%, a solid B, and not bad after a break of more than a decade. It beats the crap in the store for sure. I knew I had to get it right, as you can't buy small quantities of flour now. A 10kg bag is the smallest they have, when they have it.

In normal times I don't use so much. I listened to your experiences and prepared. But this will make maybe twenty loaves. I can trade some for eggs, some for beef, give some away. It will get used since jail will last weeks to months depending on what the General orders.
