I’m interested in things like deal breakers and which preferences people find acceptable and which ones are rooted in prejudice and bias? Like why don’t a lot of people date others their own age or physical size.

Some of your questions are answered during the zoom meeting because you can see all the participants, unless they turn off video and only use audio. You see, a profile might say they are 6 ft tall and toned with black hair, but in a zoom meeting you can see they are only 4 ft tall, wide and bald. If not, how do they expect someone to trust them, and what justifies being dishonest?

I'm not really sure ... as long as they've been honest about being single, lifestyle and interests everything else is a preference rather than a deal breaker...
Although there are deal breakers for me, like regular drunkeness, unresolved anger issues, lack of respect for ones immediate environment etc... none of those are openly admitted by anyone even if you ask them soooooo I wouldn't bother asking anyone directly....
