I like that recipe..I may snag it for a carb spaghetti meal down the track...Into protein so the only sauce I add to my meals on the side is plain Greek Yoghurt.

Selenite: I made my own tomato preserves with tomatoes and peppers from my garden!



for 3 kilos of tomatoes
I added
190 ml of white wine
2 huge onions chopped
6 green peppers chopped
9 cloves of garlic
1 and half tsp of garam masala
1 and half tsp of cumin
4 tbsp. of oregano
olive oil
salt

Ended with 8x 250 g jars of sauce

Do you make your own preserves? Do you have any special recipes or hints?

I'm intrigued that you used Indian spices as well as oregano which is a more Mediterranean herb, how will you use these preserves conversing

I've lived amongst a few different cultures... from each I gleaned different flavours that do it for me ...
I often add Indian spices to preparations just because it adds a twist of something different ...
In this case it goes very well with this sauce, like a hint of exotic that mixes well with any vegetables or carbs you would use for as a base or serve with just heated up from the jar.

If it's used as a base you could add more liquid (water or wine) and add a combination of diced courgette, aubergine, carrotte, mushrooms and cook on low till tender. Serve with pasta or rice or whole potatoes in their jackets..
Or add diced potato and cook till tender then serve with steamed vegetables...
Or use as a dip for raw vegetables ...

secretagent09: It looks like you didn't use Mason jars but I not sure.

A Mason jar lid comes in two pieces. The ring and an inner insert. When my mother took the jars out of the pressure cooker and set them aside to cool IF we heard a popping sound it meant the lid wasn't sealed tight. The center piece of the lid should stay flat on the jar. When it pops it's no longer flat.
I use these as well with the mason jars but the inner lids have a raised circle in the center. I will use a hot water bath, completely covering the bottles with water, and boil for about 15-20 mins. When the bottles are removed and allowed to air cool, the "popping" is the vacuum seal pulling the raised circle flat - indicating a seal.
You can tell just by looking at the lids if a bottle has sealed or not.

I used to make my own pickled shallots, pickled in mixed spice, garlic and ginger.

using the big sweet jars you used to get. Pickled lemon was another favourate.wine

Yes these recycled jars actually do have a raised circle in the middle and after boiling the jars the raised circle is flat!
