Gratin de choufleur a la béchamelle ... better with grated cheese mixed in with the sauce and over the top then put in the oven till the top cheese is melted and brown ... make sure coliflower is 'undercooked' when you steam it as it continues cooking in the oven. Otherwise it gets all mushy ...
