I decided to buy fresh range-free and antibiotic-free meat right from a local butcher this week and then I fried a single pork chop for dinner tonight.
..
I’ve never seen so much blood run out from a pork chop while cooking it and wonder if this much blood is always present with most fresh kill. I did not eat the blood seen in my fry pan shown below.

Do you like fried hog blood.

I don't see any blood and (taste aside) that looks like a perfectly normal pork chop to me....are you sure you're not hallucinating or something Galrads?? laugh

Yeh, had it loads of times. Black pudding is made from pigs blood and it's lovely with a fry up...in Ireland we have a thing called a breakfast roll. It's a buttered baquette, filled with rashers, sausages, black pudding and a kechup on top .

You should try one sometime...they're lush laugh

Depends how hungry I am.
Usually scrape it away if cooking the chops like you did, but if they are mixed with other ingredients, it all goes down.

hmmm I didn't scrape the blood from the chop…. It just pooled out from the chop. The chop was good btw.

Ah I didn't notice the blue marker...it looked like it was just another piece of pork chop to me...laugh

It looks good ..
Sometimes the blood pools on top when frying, but yeah it pools out like that too ..

Thanks. Ive never seen that much blood from a single chop. The blood probably weighs more than the chop. I should have weighed it before throwing it away.

You are Probably right about changing butchers but it is hard to find fresh range-free and antibiotic free meats.

Fresh meat like that will always be blood rich.
I usually buy fresh meat, so I'm used to it I guess ..

Thanks for the info. handshake think I’ll show this chop photo to the butcher. Meat is getting so expensive here. I also bought four fresh bone-in ribeye steaks (567 grams each) and paid $114.00 US dollars total for them plus tax.

The blood is the natural juice in fresh meat. If you remove too much you get dry meat. It's probably a balancing act for the butcher.

Do you know how the meat was cured?

I havent cooked many porkchops but Ive seen ground beef pattys do that a lot.

When a lot of blood is on bottom of the sealed package of beef it often means it has been frozen too many times. Too much freezing and thawing- IN THE FRIDGE NOT OUT!- results in rubber chicken, tasteless meat,etc.
If it is thawed out of fridge it must never be refrozen of course.

I used to think a roast or steak with some fresh blood in the package meant it was very fresh. laugh

No, I've never had hog blood..."hog" actually taste awful..wild, that is...that's why they "cut" hogs...I have, on the other hand, had fried goats blood..very tasty grin professor
