Potato & Leek Soup is a classic!
Nothing better on a chilly day (Except for a nice warm partner to cuddle up to) and so easy to make
No need for cream to make this soup creamy! Just blend the cooked soup with an immersion blender or standing blender until thick and smooth. Yukon gold potatoes will produce an especially creamy texture. If you would like your soup to be a little chunky, only purée half of it.
Here's all you need..
2 carrots; 2 sticks of celery; 2 medium onions; 2 cloves of garlic; 400 g leeks; 400 g potatoes; olive oil; 2 organic chicken or vegetable stock cubes.
35 mins and you will have a hug in a bowl

while you are waiting ... here is what I just observed ( there is no end of some people's stupidity)So here I am sitting on a steps, smoking my cigarette and see a Purolator delivery guy knocking on a backdoor of a store across my building.
There is huge metal lock on a chain hanging on a door.. That lock right in front of his face. But he continue to knock, for about 2 minutes. It was kind of entertaining.

I would hate the thoughts of no spuds, in moderation of course.. I make chips/crisps with the sweet ones too, just a drop of olive oil some sea salt pepper and do them slow in the oven..I like sweet potatoes as a mash, but miss fresh spuds to go with some salad or with a roast and gravy.
