Hmm.. I though soups are popular in Irish and Scotish culture.
here are a few ideas to explore
Borsh, shi, sorrel soup, shurpa, bozbash, harcho, French onion

I used love that in Spain (the spanish version of it).

'Chowder' is a thick version of fish soup. It's more like a fish stew. It's very popular here but needs to be well made or it's a mess.

My favourite at the moment is chestnut mushroom and hazelnut soup. Or I sometimes use cashew nuts instead of hazelnuts.

I make 2 types regularly .

Leek and potato but I always blend after cooking to create a smooth thick soup then top with a spoonful of fresh cream.

Carrot and coriander but with fresh chopped coriander added after blending again topped with some fresh cream.handshake

My favorite soup is lobster bisque. I once had peanut soup at the American Bounty Restaurant at the Culinary Institute of America in Hyde Park, NY. It was delicious.
