I bought a lot of chicken and rice...so, now I need to eat them up! Got to get creative...and don't know exactly what I'm going to do with them...but I know chicken and brown rice will be part of my dinner tonight.

Pot roast, Mashed potatos, Veg. and corn bread.

Just off the top of my head ...
Brown bits chicken chopped onions, mushrooms (if you have) chopped up carrots, salt pepper ... add garlic when brown ... add chopped up fresh tomato ... add chopped up fresh parsley a sprig of fresh thyme and a bay leaf ... pour BIG glass of red wine ... add a little stock if necessary ... let it simmer till chicken almost falls of bone ...
Serve on bed of brown rice!!!
Can also do stir fry and bed of rice ...

I already had to cook the chicken yesterday so it wouldn't go bad...but can still incorporate some of this.

I am going to make Salmon steaks in a cranberry and dill sauce on a bed of wild rice, sauteed button mushrooms and a strawberry ambrosia salad.
What is on your plate for the evening?
