Do all the touristy things. Definitely go to the castle, but wrap up well as it is ALWAYS windy and cold. There are always guys playing bagpipes around the main street, Princes Street, for the tourists. Give one of them guy a couple of pounds and get your photograph taken with him. DO NOT ask what he wears under his kilt; some Scots don't like that for some strange reason.
Go on a tour bus, as has been suggested. Visit the royal residence at Holyrood, and there are many really good museums around Princes Street. If you can stand heights, climb up the Walter Scott Monument. It is also in Pronces Street.
Try haggis, preferably in a half-decent restaurant. If you only eat it once, don't get it from a chip shop.
If you get tired of all the tourists, head to the centre of the civilised world, Glasgow, for an antidote to all that glitz and glamour. Apparently we are one of the ten cities in the world you "must" visit now! Maybe without the touristy tat that Edinburgh has, but we tend to be a bit more friendly, despite what some heathen southerners might say.
