I'll get this party started dancing I'm makin' a big mess of hot, spicy turkey chili!

Last week I smoked turkey legs with apple-wood for 24 hours, one of my first attempts. De-boned and cooked the bones and skin for broth. Soaking sugar beans and baby lima beans overnight and tomorrow I'm ready to start cookin' chili! dancing

I'm working from several recipes on the net and won't know the finished recipe until I'm done.

Hmmmm... what kind of wine goes with chili? wine

Well my dear, I have no beer... I'm a poet and you... idea Wait, I do have a six pack of Grainbelt I use to bait slugs in the garden. With that in mind... Can I offer you a Grainbelt? beer Do they have that in AU?

Truth be told, I don't drink beer, but do like a glass or two of red wine occasionally with company.

So... I'm selecting this wine to go in the chili to enhance the spicy, smoky flavors from my ingredients; and I'm thinking a red.

Don't really drink beer (Eeew!) just being a smarty pants!
No I have much more refined tastes and prefer red wine (my favourite) white wine, or something bubbly.

Back to the recipe, seriously, I would try a spritzig rose or a Shiraz if you're going with the red. Shiraz being a bit sweet, goes well with smokey flavours.

Whew... was beginning to think... well, never mind what I thought. laugh

Great answer Sherry smarty pants... Thanks for coming back!

Anyway... way to many beans. What was I thinking? One to three ratio and I started with 5 cups. wow They're not as good as I'd expected; I cut back on what chili I was going to make and didn't include the wine, as no one but you and I showed up. I learned a few things about cooking with dry beans and thought about adding a Grainbelt.

So, the chili adventure yielded a nice hot spicy/smoky chili; and I have 2 lbs of turkey and 3-4 cups of broth... plenty for another run with better beans. Now... what to do with the rest of these beans?

Back to the wine, seriously... wine Shiraz would be near the top of my short list. Not sure about the spritzig Rose`; white wine doesn't keep and I rarely drink. I buy a couple bottles when I find a good one... for my celler. Unfortunately no Shiraz at this time... Merlots and cabernets mostly and a bottle of Dead Red from years ago... wink Ever hear of that one?

I always say... You can never have enough good wine and chocolate.


That said, what kind of chocolate do you like?

No never heard of dead red, is that a sixties wine named after the grateful dead or something?? Haaaa! (Sorry Jack)
But really, I think I might be a bit confused as to whether you were enquiring about a wine to ADD to chilli, or perhaps a wine to drink WITH your chilli!
My answer would have been different for both!
Because when you cook wine you alter it's flavours...they kind of get caramelised!

With all those extra beans, you could do a fried bean dip (with chilli) and preserve it! And if you put some of that dead red in it, you could call it 'Dead red and full of Lead' Ha!
Anyway, it takes HOURS for your posts to get through to me for some strange reason, so I'll check my threads every now and then and get back to you.

You are partially correct; Dead Red Unwine is a Greatful Dead collector item from the mid 90s. Unwine refers to non-alcohol content, probably wasn't much good as wine 15 years ago and can only imagine what it's condition would be now. barf

I think I may make fried bean something, as the trouble was some were dried out and have a kind of gritty texture... I put the rest of the beans up in the freezer. The chili is actually not bad, tasty and makes the sweat bead on my forehead... seems hotter now reheated. blushing
