One egg is sufficient but I like two eggs in it ,,I'm not making crepes,

It all went in the bin,
,This year I have a good frying pan non stick,

Just make sure the oil is very hot,
And you have a good pan ,
That's for those that like to make good pancakes not shop bought,
Buy plain flour not self raising or they turn out like sponge,
One egg is sufficient not three or you will end up with a sponge,

I always mix some oil straight in with the mixture, tends to work a treat, and never had issues with using many eggs. Best pan I found is one I picked up used from a camping place. No coating, meant to go on a camping cooker, love that pan for me pancakes and cost me almost nothing
