Perfect jacket potatoes.

I cannot bear it when people microwave jacket potatoes, do you know how long it takes to cultivate a potato? And then we wreck in ten minutes...

Okay, wash potatoes. Then smear with olive oil and Maldon sea salt.

Sling in the oven on 220degrees, for an hour.

You will have the crispest, most delcious tasting spuds ever and if any person is on a low sodium diet, the sea salt can be scraped off before diving into all that fluffiness.

Salad dressing.

Takes three minutes.

Olive oil
Balsamic vinegar
Honey
Mustard (Dijon, I use for this)
Creme fraiche.

All in a jar with a lid on, shake. If too oily, add a dash of vinegar, if too vinegary, add more honey, takes some fiddling around with, but fabulous to get it to taste just right. No more bottles of bought stuff in the fridge.

I'll do more.

Do you know what my landlady made for me today? Cheese and Onion pie like we used to have in the North... Oh I died and went to heaven.

Cor... I like the sound of that there creme fraiche dressing.

How's this for a stir fry? You heat oil, fresh ginger and garlic. Then you toss in as many jumbo prawns and mange touts as you can afford, sprinkle with sesame seeds and soy sauce. Turn heat down put lid on for two minutes during which time you cook Chinese noodles and drink a glass of chilled rosie! Yumbo-lish-uss!

Hey, I like these type of recipes .... easy easy ......thumbs up

Last weekend I watched our chef friend (the Elvis guy) do a birthday meal for my son ........... it was simple and delicious ...... but the main part I want to tell you about was what he did for the meat garnish.

The meat was a beef fillet - charcoal grilled to perfection - then sliced onto a large oval dish ......... NOW THE IMPORTANT PART ...... CHERRY TOMATOES ..... he put a dash of olive oil in the frying pan with a teaspoon of sugar and threw in the Cherry Tomatoes still on their stalks - and just jiggled them around till they were all shiny and a little bit caramelised - and then draped them, stalks and all, over the meat. They all got eaten, cause they were delicious! (the red and green on the meat looked dazzling!

See, this is thing about food, it should be simple, it is beautiful and people muck it up so well. Mainly by freezing it and putting it in cardboard boxes...

That sounds delicious Granny, I'm going to try that.

With men, food can take the place of armourè, with women it becomes shoes/jewellery ....... One has to be aware and control this diabolical switch-over that can creep up and catch you unawares, and before you know it, you paying more attention to your plate than to the person behind the plate .......if you get my drift...?cool jackolantern

And I do get equaly, sorry way more excited about armoure (= d'amour?) and everything that has to do with it, food could never take it's place, but that is no reason not to enjoy it I guess..

Food is a passion of mine, I go to market each Saturday here and the pleasure I get from buying local produce and seeing the vendors speak of the food they have grown themselves and the joy and love they have put into it is a wonderful feeling for me.

Gimme a Saturday morning, going to the local market, buying goodies and there is even a wine stall at the market, a lovely bottle of wine, home to my place and lunch on the balcony with a man, in the sun...

What's not to like???

Oh this is no good, I am in heaven...

See, I want to talk about diets.

We are all on a diet, isn't what we eat our daily diet?

I can gain my essential nutrients witj food alone, fruit, vegetables, I don't wat many carbohydrates, but I eat enough to keep me equipped with the right amount, I eat little fat, but I never eat anything that is not natural, such as those yucky digusting spreads that stick to the roof of your mouth.

Cheese is my favourite of all time, although I do not overdo it, because of the fat content, but it is my treat like some women see chocolate as theirs.

I don't treat eating as a sin, I manage to maintain a good healthy diet, I don't look too shabby for my age, and I am not overweight, exercise and feel quite healthy.

Food should be loved and cherished, I love homegrown produce, dislike supermarkets, but somehow cannot avoid them, I do my best, but I do manage to feed myself from one market shop a week which costs me around 30euros for just me, when I have the children or guests with me, then obviously that is more.

I've just had one of Fat Harry's insider hamburgers, only made by the kitchen for a handful of regulars...the chef comes out personally to deliver it.......as I picked it up off the plate, oil poured off it onto the serviette.....this shouldn't have been eaten with a knife and a fork, it should've been eaten with a snow shovel....it was disgusting, ....and gloriously delicious....if I eat more than one of these a week, I'm guarenteed of a coronary by-pass within a year. But what perfection!!...making the perfect burger, is also an artform...smitten angel

Funny, I noticed you don't write about meat or fish, and it's true thet one can make such wonderfull meals without it. Fish and seafood are still on my menu, but I stopped eating meat 20 years ago, although two years ago I was so mad at someone that I couldn't think of doing anything else but eating a hamburger. Didn't sleep well that night...

I know the asparagus season is over, but the white asparagus? I would drizzle with olive oil, in the oven for 20 minutes and then just crack an egg on the sticks...

Back in the oven for ten miuntes, beautiful...

Mushrooms on toast.

Porcini mushrooms. Soak overnight and keep the juice. Has to be porcini.

Squeeze out the liquid from the mushrooms.

Sweat very finely chopped onion and garlic off. Glass of white wine, add liquid from soaking mushrooms, allow to simmer down. Add a splash of Marsala..

Take some brioche, slice to desired thickness and lightly toast, both sides.

Sauce should now be reduced, add dash of single cream stir and serve on the brioche. Perfect for supper, with a glass of red wine.
