fugitive432: I find the opinions on this always seem to differ--can we get any consensus on this?!?
Peel, boil for 20 minutes, drain, then roast for about an ninety minutes in a foil covered roasting tray with some oil at the bottom. Every 30 mins or so, uncover and pour oil on them and cover back up.

Voila, nice crispy roasties
sprinkle on a little butter or olive oil, rosemary, or oregano, etc....dip in Roquefort dressing or freshly made Ranch dressing. (Only the Ranch dressings you make at home are really good-the bottled stuff never tastes quite right to me.)

No no no no NO!! please leave the jackets ON!! don't give me an argument or no hug today...
The job is done! The consensus is there is no consensus so I've HALF-peeled, & sliced up & thrown said (towel dried) potatoes (mix of red, white and orange/sweet) in the oven with one giant red onion between, smoothed over in vegetable oil, dashed allover a personal mixture of spices and they are right now going at it and it smells amazing. But these other recipes I am promising myself to one day try. MMmmm! Oh, what kind of cheese do we have in the fridge though... (oh, and there's an apple pie in there too...on its own of course!)
I have only just looked up and discovered the famous UK roaster... "Delicious Yorkshire puddings..." well I have quite a ways to go before I get to that level (pretty scarey, no?) it's true; compared to me the Brits are culinary whizzes!! but i still like food AND i say it pretty much takes care of itself you just gotta throw it in the oven
