allthegoodnamest: Being of Mediterranean background , my mother often cooked tasty dishes using different beans ( butter beans , black eyed peas etc.) not to mention chick pea & lentils.. You can find some interesting recipes online & Indian cuisine has many vegan recipes if you like spicy food.


thanks. no spicy food for me. in the US they talk a lot about the mediterrean diet. I use virgin olive oil a lot, even for my skin. I like Indian food too

Yes. I love Indian food. My favorite Indian spice mixes are Chana and Chat Masala.

Me too.. Worked with some excellent Indian chefs over the years & picked up some great tips.
It's amazing how just a few spices added to simple ingredients can create such tasty dishes.

equiya: yes it is not easy being a vegan, I was a vegetarian before becoming a vegan. veganism has been very good for my health though.
I eat a lot of beans, chickpeas, lentils, lots of greens - raw brocoli, raw spinach, raw cucumber, etc. tofu, tempeh.
I snack on nuts. I used to eat cheese too when I lived in France.
I don't miss it now that I am a vegan. quinoa is a high source of protein. I eat it too. tempeh, tofu, chickpeas, brocoli, all greens are good sources of protein


Yes, I eat all that as well, except for the Tofu and Tempeh. I stay away from soy because it is high in phytoestrogens, it is goitrogenic (thyroid suppressing), it is a trypsin inhibitor. Trypsin is a digestive enzyme we need to properly digest protein.

There are some health benefits to soy, but I avoid it because of the detrimental effects.

Wow, you've had experience with Indian chefs. That's awesome. I love healthy cooking. I don't eat the typical Western diet. I eat whole unprocessed foods. I have cut processed food, junk food and sweets from my diet. If it is man-made, I don't eat it. And the only oils I use are Coconut and Extra Virgin Olive oils.

I wouldn't waste good olive oil on cooking, you take out all the goodness when heating it. Stick to Virgin for cooking & use the good stuff for dressings.... Processed foods are a no-no for me also as are fast food take outs... The Indian chefs I've worked with didn't specialise in their own cuisine although I did pick up some useful tips. thumbs up

Yes, I could easily be vegan if I gave up dairy and honey. I just can't seem to. sigh
