Seriously in my opinion....it is because of the hierarchy. Church and State both have their "rituals" and garb...it is a display of authoritative rank. The "Changing of the Guard" at Buckingham Palace...all the ceremony and pompous nonsense that goes on in the parliaments of constitutional monarchies...even militaries...uniforms, precision marching, salutations...
So, in the church, the bling and the gowns...to signify we are not you....or something like that

my own personel view is.......the POPE....should stand on the balcony ,in ROME......with the mass,s below him.....in a BORAT..swimsuit....(in white)...to spread the word, times are changing.....thats my view....

I adore the pageantry of a Roman Catholic mass in a cathedral setting 
However my faith in the religion was shattered somewhat in my early teens, when my struggling widowed mother decried the hypocrisy of a mass we had just attended, extolling the virtues of humility .. as we watched the priest depart in a brand new high-end motor vehicle.
And of course, recent history has revealed more absolutely unforgiveable crimes and betrayals of trust.
So as an adult I took on board the good parts of that faith, as I assume it was intended, and it gives me solace and comfort when I need it the most

First off, they are called vestments. Secondly, Let me ask you something. Have you ever dined at a very fine restaurant? If you answer yes, then in doing so you'd probably expect a few things. (a) you'd probably expext to pay a bit more than you would then dining at say a Denny's. (b) you'd probably expect superior cuisine. (c) you'd expect an attractive dining enviroment. (i.e. white tabelcloths, soft music, dim lighting, ect.) And probably most importantly...... prompt and respectful service. And who or what does that usually depend on? The waiter of course!
If you think about it, the waiter communicates his/her ability to serve his/her guests by his/her attire. If you are is willing to spend a large sum of money on one dinner and a bottle of wine, you would be rightly offended if their waiter arrived at the table in jeans and a t-shirt. This is because attire matters, wouldn't you agree?

What we wear communicates our respect for an occasion: the vesture of a bride and groom on their wedding day—the clothing we wear for a funeral—the robes we wear at graduation—the attire we wear for a job interview or a first date. Whenever the occasion calls for it, we dress appropriately. A waiter at a fine restaurant wears a tuxedo for the same practical reason that a priest wears certain vestments for the Holy Sacrifice of the Mass. In each case, the clothes of the server communicate the fact that he knows the importance of the occasion, and how best to fulfill his duties. If a fine dinner presumes proper attire, how much more so the Holy Sacrifice of the Mass by which God becomes present?
