hmmm my paternal grandmother was from Palermo Sicily and she made spaghetti sauce definitely different from how family around amalfi amd guilianiva Italy made it.

You boil it in a big pot of water, with not a lot of water, and a bit of olive oil, with no lid on the pot, and it froths at first, but does not boil over.
