yummmy hmmm my paternal grandmother was from Palermo Sicily and she made spaghetti sauce definitely different from how family around amalfi amd guilianiva Italy made it.

You boil it in a big pot of water, with not a lot of water, and a bit of olive oil, with no lid on the pot, and it froths at first, but does not boil over. Even a vented cover, does not give it enough air.

yes, but a slightly vented cover will speed up the cooking time....
