Date Squares

Delicious date squares with a chewy oatmeal crust.

Ingredients

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
1 ? cups packed brown sugar, divided
¾ teaspoon baking soda
¼ teaspoon salt
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
1 teaspoon lemon juice

Directions

Preheat the oven to 350 degrees F (175 degrees C).
Combine oats, pastry flour, 1 cup brown sugar, baking soda, and salt in a large bowl. Mix in butter until crumbly. Press half of the mixture into the bottom of a 9-inch square baking pan.
Combine dates, water, and remaining 1/3 cup brown sugar in a small saucepan over medium heat. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and spread the remaining crumb mixture on top.
Bake in the preheated oven until the top is lightly toasted, 20 to 25 minutes. Cool before cutting into 12 squares.

I want to know how to make a light fluffy icing, i want to use a lot of butter in the icing but really want to know how to get it light and fluffy... do i add yoghurt or cream to get this ?

Home baked Gluten Yeast Free multigrain bread mixing process using pictures

Ingredients

Ingredients includes ground dried Gooseberry (Golden Fruit), Diced Dates, Raisins, Blueberries, Apple pieces and Longan fruits other mix fruits found Aldi's mixed nuts. The freshly ground fruits + mixed nuts including, Walnuts, Almond, Cashew, Brazil, Hazel, also includes Sunflower and Pumpkin seeds, Pine nuts, Goji berries other secret nuts herbs, seeds and spices, including a teaspoon apple cider vinegar, teaspoon macadamia-nut-oil (Drum 58 of course!), ¼ teaspoon of Manuka honey...
250gm "Laucke Gluten Free Easy Bakers mixed grain flour" Wheat, Yeast & Dairy Free. I use a mixer to mix into batter (not a dough) after weighting-out 250gm flour into the 200ml of warm water that has the macadamia-nut-oil, honey and apple cider, in warm water, that helps to warm up the loaf and helps activate the baking soda. It rests in warmed oven for just over 1/2 an hour as long as its mainly Laucke four.
I've also been warming up the Cuisinart oven first by running its steam function for four minutes before putting the batter mix into Baking Paper lined Baking lined dish (no mess Charlie) then it rests in the oven for about 35 minutes, that provides time for the Baking Powder to release carbon dioxide. It rises also little air pockets form. Cuisinart ovens bread setting it steams for 5 minutes and bakes for further 30 minutes at 190 deg.
Laucke easy bakers gluten yeast free Meals and Grains flour is self-rising, it has Baking Powder in it, no yeast
(the flour already has Baking soda, also known as sodium bicarbonate in it, which is widely used in baking because it has leavening properties, meaning it causes dough to rise by producing harmless carbon dioxide)
If you can't get Laucke Gluten Yeast free or any other Gluten Yeast free self-rising flour. Gluten Yeast free plain flour or multigrain then you can add 12.5 g of Baking Powder to every 250g of flour. I have been adding a small part teaspoon of organic Moringa Leaf Powder, Mango powder + type of seaweed Spirulina.

Creamy Mushrooms

This is an old recipe that I got off a friend when he was visiting, after he cooked it up one night....
....it's very yummy....great as a side dish for dinner.
And, again....very simple to make.
I like quick and easy recipes.

Ingredients

1 lb Mushroom(whole or sliced)
2 oz Butter
1 Small Chopped Onion
1/2 Teaspoon Salt
1/4 Teaspoon Black Pepper
1 Teaspoon Paprika
1 1/4 Cup Sour Cream
1 Tablespoon Chopped Parsley

Directions

Saute the onion in butter for 5-7mins until softened. Add mushrooms. Cook for 5 mins, stirring occasionally.
Add salt, black pepper, paprika and sour cream.
Heat through, but do no boil.
Lastly, stir in chopped parsley.

Notes

It's an old recipe, so it's in imperial measurements.
Just convert to metric, if needed.

Chocolate Sponge

This is a no fail Chocolate Cake which I use for birthdays.
It is quick to make and very moist.

Ingredients

3 oz Butter
1 Tea Cup Sugar
1 Tablespoon Golden Syrup
2-3 drops of Vanilla Essence
1 egg
2 Tablespoons Cocoa Powder
1 1/2 Tea Cups Flour
1 Teaspoon Baking Powder
1 Cup Milk
1 Teaspoon Baking Soda


Chocolate icing(cocoa powder, icing sugar, drop of vanilla essence, dab of butter. Blend well with a little hot water)

Whipped cream with 1 Tablespoon icing sugar blended through(optional)

Directions

Mix with electric beater the butter(I soften butter a little in microwave first), sugar, golden syrup and vanilla essence with 1-2 Tablespoons of hot water to a smooth creamy mixture.
Beat 1 egg. Add to mixture and blend with mixer.
Sift cocoa, flour and baking powder into mixture and blend with fork.
Lastly add milk which has baking soda dissolved into it.
Mix together.
Pour mixture into bake tin lined with baking paper.
Bake 30-35mins at 350F.
Cool. Ice with chocolate icing.
Cut into 2 layers and fill with whipped cream, prior to icing, if desired.

Notes

I've used imperial measurements.
Just convert to metric, if needed.
I bake for 30mins....sometimes a further 5mins is required.
Just touch test to ensure it is cooked through.

Kumara(Sweet Potato) Salad

I have been making this salad every Christmas for years. The family never seem to tire of it.
It is deliciously simple, and simply delicious. The beauty of it, is it takes little time to prepare.
Traditionally a summer recipe.

Ingredients

2 Large Red Kumara(Sweet Potato)
3 Spring Onions
1/4 Cup Mayonnaise
1/4 Cup Sour Cream
1/2 Teaspoon Curry Powder
Salt to taste
1 Tablespoon Chopped Walnuts

Directions

Cook sweet potato in boiling, salted water until just tender.
Drain and leave to cool.
Cut into 2.5cm cubes.
Combine sweet potato and spring onions in a serving bowl.
In another bowl, combine mayonnaise, sour cream, curry powder and salt to taste.
Pour this over the sweet potato.
Toss to coat.
Garnish with walnuts.

Notes

I double this recipe at Christmas to serve 6-7 people.

Marboulius Golden Crust; self rising multigrain gluten free, yeast free, dairy free bread

every couple of days I bake a fresh loaf, after an operation course of drip antibiotics i found digestive system no longer worked. Weeks and months of trying this and that, i then took goat colostrum capsules, mangosteen and couple other capsules.
And read a lot online including carefully about gut leak, then worked out what foods upset my tummy. Tried one item at a time, spent heaps of money of different flours, yeast and nuts learning what i could eat and what i couldn't.
My daily diet is still mutton stew that contains lots fresh vegetables, rendered bone powder, chia seeds and teaspoon red palm flower oil (mutton and red palm flower oil is lying gut) -(essential). Fish and Chips every day then a bit of variation like steamed silver-beet meat and potato. Of course three four slices of my Marboulius Golden Crust

Marboulius™ Golden Crust a super bread with ingredients that includes 250g Laucke Self Rising Multigrain, Gluten Free, Yeast Free flour (from SA), Coconut flour, small amount dried Mandarin, dried Kiwi fruit, dried Banana also dried Mango from Philippines, dried Goji Berries, Goose Berries, dried Mangosteen, seedless Raisins, shredded dried Coconut, dried Pineapple, dried Papaya, Pecan-nuts, Walnuts, dried Apple, Almond nuts, Macadamia nuts, Sunflower seeds, tsp Colombian Red Palm Fruit Oil, two eggs, a healthy super-loaf when you can't eat bread that is in Cuisinart Convection / Steam Oven that bakes your bread to perfection; light & bouncy Marboulius Golden Crust…
I'm using South Australian Laucke brand Gluten Free Easy Bakers Instant Oven Bread. Their flour contains Potato Flour, Tapioca Flour, Rice Flour, (Grains Linseed, Kibble Corn, Sunflower Seed, Soya Grit) and Soya Flour, plus I ground died fruits, nuts add couple eggs less than one cup water lightly use beater into a patter.

Directions

A fairly wet Batter is poured into baking paper lined baking dish.

I let the batter sit for twenty minutes

Cook in Cuisinart Convection / Steam Oven at 200 degree for 30 minutes.
