Vanilla Cream Brulee (Creme de baunilha flambado)

The easy way of the traditional Portuguese dessert.

Vanilla Cream Brulee Creme de baunilha flambado Recipe

Ingredients

1 vanilla bean
2 l/2 cups heavy cream
8 egg yolks
l/4 cup superfine sugar

Directions

1) Slit the vanilla bean length wise and put in a saucepan. Pour the cream into the pan, then bring almost to a boil. Take of the heat and allow to stand for 15 minutes for the vanilla flavor to develop.

2) Lift the vanilla bean out of the cream and holding it against the side of the saucepan, scrape the black seeds into the cream.

3) Use a fork to mix together the eggs and sugar in a bowl. Reheat the cream, then gradually mix it into the eggs and sugar. Strain the mixture back into the saucepan.

4) Place 6 ovenproof ramekins or custard cups in a roasting pan then divide the custard between them. Pour warm water around the dishes to come halfway up the sides, then bake in a preheated over at 350 degree Fahrenheit for 20-25 minutes until the custard are just set with a slight softness at the center.

5) Leave the dishes to cool in the water, then lift them out and chill in the refrigerator for 3-4 hours. About 25 minutes before serving, sprinkle the tops with confectioners sugar. Caramelize using a blowtorch.

Crispy sardine cakes (Bolinho de sardinha)

Ingredients

2 cans sardines (4-5 ounces each) packed in water or olive oil
2 tablespoons fresh parsley
¼ cup kalamata olives, chopped finely
zest and juice from 1 lemon
½ ripe yellow plantain, peeled and mashed
¼ cup olive oil

Directions

Drain sardines and place in a bowl. Mash with a fork.
Add parsley, olives, lemon zest and juice, and mashed plantain. Use fork to combine well.
Use your hands to shape into 4 equal size patties and set on a plate.
Heat olive oil in a large skillet over medium heat.
When oil is hot, very carefully place the patties in the pan and allow to cook without disturbing until browned and crispy on the bottom, then very carefully flip each patty so they can get equally brown and crispy on the other side. This should take about 5-7 minutes, but this depends very much on exactly how hot your oil is and the pan you are using. Don't allow them to burn, but do allow them to cook on each side long enough to get very crispy and heated through.
Remove from pan and serve on top of a bed of lettuce, garnished with additional fresh parsley, and with a wedge of lemon to squeeze over top.

Ingredients

400g/14oz skinless white fish fillets (such as cod, haddock or pollock)

Bread crumbs. 40g/1½oz bread (approximately 4-5 thick slices).

Butter, parsley, dill, tarragon, salt, and pepper.

Directions

To make the fresh bread crumbs, take 4-5 slices of white bread, crusts removed and place them in a food processor. Pulse until mixture resembles coarse crumbs. Mix the bread crumbs with 3/4 stick of melted butter. Season each fillet moderately all over with salt and pepper.

Mix bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl with a fork until crumbly. Sprinkle evenly over cod. Bake in the preheated oven until fish flakes easily with a fork and the crust is golden and crunchy, about 20 minutes.

Lighter Carbonara

Tasty quick meal

Ingredients

100g/3½oz dried tagliatelle or spaghetti
50g/1¾oz frozen peas
2 tsp extra virgin olive or sunflower oil
½ onion, finely chopped
2 smoked back bacon rashers, cut into 15mm/?in-wide strips
100g/3½oz small closed cup mushrooms, sliced
1 courgette, cut into 1-cm/½-in slices
3 tbsp single cream
15g/½oz Parmesan, finely grated
sea salt and freshly ground black pepper

Directions

Method
Half-fill a large, non-stick saucepan with water and bring to the boil. Add the pasta to the pan and cook for 10 minutes, or according to the packet instructions, until tender. Add the peas and cook for 2 minutes more.
Meanwhile, heat the oil in a large, non-stick frying pan or wok. Add the onion, bacon, mushrooms and courgette to the pan and season with salt and pepper. Fry over a medium–high heat for 5 minutes, stirring often.
Drain the pasta and peas and return to the saucepan. Add the cream and the bacon mixture to the saucepan and place over a low heat. Toss the mixture with a couple of forks for a few seconds until the cream is hot and everything is well mixed. Sprinkle with the Parmesan and serve immediately.

Notes

This pasta dish tastes rich and flavourful, but is also fairly low in calories. If you're on a diet of between 1200–1500 calories a day, you can enjoy a low-calorie breakfast and lunch as well as this carbonara for dinner.

Each serving provides 393 kcal, 18.5g protein, 43g carbohydrates (of which 5g sugars), 15g fat (of which 6.5g saturates), 6g fibre and 0.9g salt.

Healthy protein and veggies, low carb. It is traditional Chinese recipe and found in many western restaurants in Australia

Ingredients

100 g chicken any part, poached, then thinly sliced or shredded
1 1/2 cups finely shredded cabbage, mix with purple one if like
Little bit of grated carrot, finely sliced red onion
Chopped spring onion & cilantro
Little sliced red chilli, sesame seeds for optional garnishing
3 Tb peanuts sauce dressing recipe below

Directions

To serve, toss everything together. For
Peanuts sauce dressing: 2 cloves garlic crushed into paste, add 3 Tb unsweetened smooth peanut butter, stir with 1 Tb water until smooth, add another 1 Tb water mix again. Then stir in one by one 1 Tb sugar, 1/2 tsp salt, 2 Tb soy sauce, 2 Tb white vinegar, 1 Tb sesame oil.

Notes

You could use leftover roast chicken or turkey. Or substitute chicken with your favorite meat, such as prawns or lobster tail, clay fish or crabs, squid or octopus cooked to your liking.
If you have a mini blender you can whizz all the dressing ingredients together in just few seconds. Use sesame paste if you can buy it from asian shops. I made large quantity of sauce put in a bottle and refrigerated and used it to toss warm noodles. Shake the bottle each time you use

Baked Chicken Breast w/Toasted Bread Crumbs and Shredded Cheese

I like it cause it tastes good and doesn't take a long time to make it.

Baked Chicken Breast w Toasted Bread Crumbs and Shredded Cheese Recipe

Ingredients

Chicken Breasts,Toasted Bread Crumbs and Shredded Cheese.

Directions

Put raw Chicken breasts in a storage bag and add Toasted Bread Crumbs(to which I toast the bread myself and grind up the slices of bread in the blender) and the Shredded cheese I also shred myself.

Shake bag until chicken is coated with crumb and cheese mixture.

Place Chicken in a baking dish of your choice and then coat the chicken with leftover crumb mixture.

Preheat oven to 425 degrees and bake for about an hour.

The side dishes are Julienne Potatoes and Mac Salad

BBQ Meatloaf Mini's

Ingredients

1 package (6 ounces) stuffing mix
1 cup water
2 tablespoons hickory smoke-flavored barbecue sauce
1 pound ground beef
1 cup shredded cheddar cheese
Additional hickory smoke-flavored barbecue sauce, optional

Directions

Directions
Preheat oven to 375°. In a large bowl, combine stuffing mix, water and 2 tablespoons barbecue sauce. Add beef; mix lightly but thoroughly. Press 1/3 cup mixture into each of 12 ungreased muffin cups.
Bake, uncovered, 18-22 minutes or until a thermometer reads 160°. Sprinkle tops with cheese; bake 2-4 minutes longer or until cheese is melted. If desired, serve with additional barbecue sauce.
Freeze option: Cover and freeze cooled meat loaves on a plastic wrap-lined baking sheet until firm. Transfer meat loaves to a resealable plastic freezer bag; return to freezer. To use, partially thaw in refrigerator overnight. Place meat loaves on a greased shallow baking pan. Bake in a preheated 350° oven until heated through. Top with cheese as directed.

Pomegranate salad (slightly acid/salty flavor)

I got this from my mom who was a chef.

Ingredients

1.Onion (any size, but white)
2.Pomgranate (dark red)
3.Salt
4.Sunflower oil

Directions

1.Cut onion into thin semi-rings
2.Squeeze pomgranate to get juice (appox. 1 table spoon, but it depends on your taste)
3.Put salt
4.Add oil
5.Mix
6.Eat and be happy!

Indonesian Rambutan Pickles

Rambutan Pickles famous lately in Indonesia. I dont know where it start actually, but it seems from some city in kalimantan island ( Banjarmasin) or some island in sumatera province like Bangka Belitung. Because the small calamansi lime is grow dan can be found there.

I found my own small calamansi lime because i have planted in my garden.

Indonesian Rambutan Pickles Recipe

Ingredients

A bunch of Rambutan fruit remove the skin
8 Red Chilli pepper cut in small pieces
3 or 4 sonkit lime / calamondin/ green small calamansi lime
1 cucumber
a pack of honey pineapple
1 bangkoang/yam bean
mineral water
1 teaspon salt
6-10 spoon sugar

Directions

1) Peel the rambutan skin untill you got the white flesh of rambutan fruit, place in a bowl
2) Cut cucumber and bangkoang/yam bean in to a tiny square and placed in the same bowl
3) Cut pineapple in to a tiny triangle placed in the same bowl
4) Shake sugar, water and salt pour to the bowl
5) Squeze the lime over the fruit in bowl and give the red chilli, stir it.
5) EAT!

Notes

1) If you want to get a sweet taste than you can add more sugar but if you like salty you can add more salt.
2) If you want to serve it cold, you can keep in for a while in refrigerator.

Anise Sugar Cookies

Browsing internet for good Anise cookie couldn't find one did find one on Simply site but all them made me think of Lace cookie ensemble...stop using no shortening layout everyone...heck why not add condense milk into your cooking because you have your sugar fix need, might well put condense milk in there understand that what is required.

Anise Sugar Cookies Recipe

Ingredients

Wet
1/2 c. unsalted Butter + 2 TB shortening
1 egg
1 to 2 Anise seeds
1/8 - 2/8 c. sugar

Dry
1 1/2 c flour
1/2 tsp to 1 pinch salt
1 tsp baking powder
1/2 tsp baking soda
2 tsp Benefiber

Directions

Beat Wet together, and add dry together mix well.
Roll out cut outs and press into sprinkles, or set aside icing for later.
or turn into balls and flatten.

Preheat 375 F / 190 C

6-7 minutes/ 13 minutes because of elevation.
