One of the few places where you can still get the old beach hut atmosphere is the island of Koh Pangyan
not sure where have you been before in Thailand ? If you like the beach i can suggest Similan island or Koh Ta Chai in the South and the east are Koh Kood or Koh Chang, Trad province.
If you are interesting in culture, nature i would suggest you to visit Pai, Mea Hong Son province or Chiang Mai since the weather in Jan is so nice too and feel free to ask if you need some advise :)
